I live in Italy. If I want fish and chips, I have to make it myself as there are no fish 'n' chip outlets here.

GREAT! Thanks everyone.
I have so many recipes tried and tested, but none of them give me that "chip shop" sensation. Even tried a recipe by Anthony Worral Thompson, it was almost there. It included yeast in the recipe. I will give the best ones a go.

Plain flour mixed with a pinch of salt and enough beer to make the batter just thick enough to stick to the fish. Mix it up and let it sit for an hour. Dredge the fish lightly with plain flour, dip it in the batter and then into the hot oil. It's messy and drips all over, so get close to the fryer when dipping. The excess will make all the crunchy bits to go along with the fish.

all depends on where you are trying to compare it to. if it is fish and chip shops in the uk in general then they dont use beer in their batter, but it tastes better when you do. i always add paprika to mine and plenty of salt and pepper in the batter as well as the flour for dusting the fish beforehand.
if you add baking powder it will make it nice and crispy, but you must let it rest in the fridge for at least half an hour after you mix it.

The secret is to use sparkling water in the batter or you can also make it by adding a little beer.

I used TEMPURA batter, you can buy it in any grocery stores. They taste so good and very light but crispy

it depends on what you want? theres beer batter which is beer, flour,salt, and paprika. Theres buttermilk which has buttermilk,eggs,Tabasco Sauce , Worcestershire Sauce, garlic salt,salt, pepper, and self-rising flour.
