I depends on what you want to know about her and how long you have known her and how old she is. If it is early in the relationship, totally avoid question about ex-boyfriends and the like...is a sign of your insecurity and a total turn off.
To get her to talk and open up about herself, you could ask her what are her goals in life, what things bring her the greatest joy in life, what was the most disappointing/embarassing/saddest/happiest/funniest moments in her life, how she feels about her parents. Did she/does she have any pets? If so, what are some of her favorite memories about them. Does she participate in a sport? If so, which one? What are her hobbies? What does she like best about them? If you are truly interested in learning more about a sport or hobby she participates in, ask her to tell you and show you more about it.

Hmmm.....the trick is to ask her something that will keep her talking. Something that will captivate her and make her think. Something related to saaay her hobbies? Her interests? Its hard, I know.
