Quite simply because water is essential to bodily functions. It alows every organ to function better. If you are dehydrating yourself, you are retaining water and slowing down your organs. Especially your kidney which is responsible for riding your body of toxins.

Try to drink about a gallon of water per day. I know the minimum recomendation is 8 glasses, but one gallon is better.

Water flushes out the toxins in your body. Also, most people lose weight by switching to water alone because other drinks such as sodas, and even diet sodas contribute to weight gain and are empty calories, which means they have calories that make you gain weight yet offer no nutritional value, so you still have to eat something too which is more calories.
