how much vodka would i use?

6 tbsp extravirgin olive oil
2 tbsp butter
1 sliced onion
1 cup of Barolo wine
8 cups of meat stock (fresh is better)
4 cups of Risotto high quality Rice
truffles according to the taste (white preferred)
fresh grounded pepper
fresh grated Parmigiano Reggiano
salt

Preparation

In a medium pot heat the butter with the olive oil and saute' the onion. When soft add the salt, pepper, the rice and let it fry for a couple of minutes. Then pour the wine and bring to boil over low heat. At this point start to pour the meat stock in little quantities per time and cook over low heat.Stir frequently and add some salt to taste. When all the stock is absorbed (15-20 minutes) remove from heat and generously add the grated Parmesan Cheese. You can garnish the Risotto with very few thin slices of your favorite truffle. Serve hot.

Yes, but you need to be careful. The alcohol content in the vodka could make it flare up! As with other risottos add a little at a time to keep a nice creamy consistency.

no the wine is added for flavor not alcohol content, the alcohol cooks away. vodka has a completely different flavor than wine and i cant imagine that it (vodka) would taste very good in risotto

You mean substitute Vodka for the wine?

No. It would not be risotto.
