One thing i really like to do is make "meatloaf patties" with mashed potatoes and green beans. I prepare the meatloaf mix as i regularly would and then fry it in a skillet like hamburgers, and then simmer it in the topping.
Meatloaf
2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce
Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute
In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.

This can be made ahead and refrigerated, pop in the oven to reheat
Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

When I'm having a crazy busy day I usually throw some pasta on (we like whole grain pastas) with some marinara sauce. Sometimes I make salads with pre-cooked chicken, too. Toss some bagged salad, a little cheese, whatever veggies I have around and some cooked grilled chicken in a bowl and voila! Dinner is served.

the Cambells Chicken casseral..you just put 2 cups of rice, a can of cream of chicken, some garlic salt, and pepper into a baking dish..(about 3 minutes prep time) then lay the chicken on top and bake for about 1 hour at 375...it's not quick unless you throw it in while you take care of other things

Stir fry, of any kind. Also chicken breast cooked stovetop with couscous. Couscous is wonderful, it only takes about 7 mins.
Try to buy one of Rachael Ray's 30 minute meals cookbooks, they're awesome.

I agree--Rachel Ray's books are GREAT for quick and easy, yummy meals.
Most of her pasta recipes really only take about 15 minutes.

hamburger helper 3 cheese manicotti-- I always keep a few boxes in the pantry. a slice of buttered bread goes good with it & if you have time, a tossed green salad

stir fry is the best make your rice then throw meat vegies in pan and stir fry there re to many recipyes so lok them up,but fast healthy and fun
