Considering that an MRI to check a persons body is as big as a pickup truck, try to imagine one for that.

MRI relies on the relaxation properties of excited hydrogen nuclei, so you scan of the earth would only really tell you where the water was!
In theory any nucleus that has a nuclear spin can be used ( Helium-3, Carbon-13, Oxygen-17, Sodium-23, Phosphorus-31 and Xenon-129) but the natural abundance usually precludes useful information.
