Jackie Chan is just Chinese. Cantonese and Mandarin are dialects of the Chinese langauge. If you want to learn more about Jackie, he does have a book out that he describes his life.

Jackie Chan has studied various arts for different lengths of time - check his bio it shouldn't be hard to find. What you see on the screen is incredibly skillfull but as much to do with a real fight as the need for speed games are to a real car race. As for which art is best? Well best for what? All have strengths and weaknesses.
