I sell about 4,000 to 5,000 eggs to markets each day for "deviled eggs" and other similar items. We hard boil the eggs. A perfect hard boiled egg is 12 minutes in boiling water. We go for 8 minutes and sell them. We tell the marketers to put them in preboiled water for 3 minutes ( we know they will overcook), take them out and trow them in ice water. the shells crack. This is how most places "crack" their eggs - cold water.

I agree with the one above about soaking them in cold water. To start, I put my eggs in the pan, cover with water, bring that to a boil for about 8 minutes, than turn off the heat. I let them sit for about 4 minutes and then dump that water off and begin to run cold water on them until the eggs are no longer hot enough to affect the temperature of the water. I let them soak in cold water for quite a bit. Last week I made some and put them into soak, I fell asleep and didn't make the deviled eggs until the next morning. Easiest eggs I ever peeled. I"m sure some would say that was unhealthy leaving them in a pot of water on the counter all night. But I'm here to say I survived!

I'm not sure how they do that but if you are trying to get the shell off without messing up the egg, I usually soak them in cold water first until they completely cool off then they are easier to get them out of the shell. Also start at the end with the airbubble. That usually helps.

Don't use really fresh eggs--a week old at least or the white will stick to the shell. I tap them on a hard surface or hit it with the back of a knife until "medium crackled". and then start at the flat end because of the air pocket. You should be able to unwind the shell in one piece with practice.

Some stores do offer eggs already boiled and peeled. Also, some stores do sell deviled eggs

Commercial institutions can buy peeled hard-cooked eggs in a big tub (1, 3 or 5 gallons). My guess is that is what large grocery store deli's use.
