It all depends on your budget and your experience as a photographer.
For entry level photography you should look at the Canon 400D (Rebel Xti, 10MP).
But, the kit lens which comes with that camera is not the best, so I would recommend the body only, and then purchase a separate lens (but that will be quite expensive, because a decent lens will cost more than the body alone).
The kit lens would be ok though, for you to get the feel for the camera etc.
And as your experience grows, you may then wish to buy a better lens.

Or for a slightly higher specced camera, look at the EOS 30D (but it's only 8MP) but you still need to buy a better lens, because it comes with the same crappy kit lens as the Rebel.

I too am from the Nikon Camp, I own a D50 and a D80 and they are excellent cameras.

You didn't mention how much you are spending, if this is your first SLR I would suggest the EOS400D. The link below compares some Canon SLRs for you so that you may compare prices and features for yourself.

The one you can afford. Keep in mind that for most SLRs, the lens(es) are an additional purchase. Unless you get a packaage deal. All canon SLRs are high quality products

EOS 30D - I have had mine since May 2006 and it kicks photo butt!

It's digital.

the rebel is supposed to be good...

i personally prefer nikon myself though
