Mash is the mixture of grains, sugar, water, and yeast, this mixture is allowed to ferment, The mixture varies, may or may not contain all the above, anyway the yeast consumes the sugars present and converts them to alcohol, depending on the yeast (some are more tolerant of the alcohol than others) when the alcohol reaches a certain level the yeast is killed or becomes inactive. This mixture is distilled to drive off the alcohol which is then processed and becomes any one of a variety of liquors.
