I need to follow a low carb / low GI diet & low fat, which is dairy, pork and egg free as I am intolerant to them. I need to follow this to help me manage my polycystic ovary syndrome and Irritable bowel syndrome. I'm finding this quite difficult!! Especially as I love potatoes and bread. I am quite health conscious and don't like to eat processed foods or foods with hydrogenated fat in it. Any recipies or advice greatly appreciated!!

If you want to make them lower fat, use light coconut milk. I have researched your conditions for friends and family in the past and would condsider re-evaluating the low-fat part of your diet. Not eating enough fat may actually further aggravate your conditions.

I make coconut milk smoothies with berries. 1/2 cup full fat coconut milk, 1/2 cup water, 1 cup frozen fruit, 1T coconut oil and sweetener (I use raw honey. Stevia may be a good choice for you), optional. Blend and enjoy!

Another thing that I like is soups. I make homemade meat stocks and mix them with coconut milk, curry paste, coconut oil, and sea salt. You can add meat and vegetables to this.

I use unrefined coconut oil and full-fat coconut milk in many recipes since I cannot have butter or milk and it has amazing health benefits! I even spread it on veggies. There is a great website and article about it below. The same website also has information on PCOS and diet that you may find helpful.

I also eat leftovers for breakfast from dinner which is usually vegetables and meat. Another thing that I want to try is making flaxseed crackers and eating them with smoked wild salmon. They have great smoked salmon at Trader Joes if you live near one.
