Two reasons: 1) Hyperventiliation leads to low levels of carbon dioxide which can exacerbate anxiety, slowing the breathing down raises these levels and can help and 2) any focused activity (concentrating on breathing) takes your mind off the anxiety provoking situation.

It is because by taking deep breathes more oxygen gets into the bloodstream therefore more oxygen gets into the brain....this calms the person and makes them more alert....a similar example is when we are tired we yawn...the yawn gets more oxygen to the brain and makes us more alert. The is another reason a person is told to take deep breaths when they are nervous....it is to get the person to focus on their breathing instead of what they are nervous about.

It calms the brain, its soothing, but the real reason is, your heart usually starts to beat faster when your nervous, by taking deep breaths, it forces your heart to slow down and go back to normal
