Oysters and wine.

Simple but elegant. If ya can find out what he perfers that'll help, but I would do a good old fashion home cooked meal of Roast, mashed taters and gravy, veggie and salad. Nice wine if ya like (Can't recommend as I dont like wine). Do a nice table setting maybe with candles and GOOD linen. Cheesecake with cherries for dessert. and coffee after or with dessert.

I'd go for something homelike and traditional (even I'm one of the most progressive people you'll ever meet). Try pasta and salad, followed by something chocolate. Nothing too expensive, or he'll know that you're trying too hard. Nothing too simple, or he'll know that you aren't trying hard enough. Choose good-quality ingredients and simple recipes that he can pronounce.

find out what kind of food he likes and if you can't find out have different dishes so he'll be sure to like something make sure he's comfortable and enjoying himself in your home a nice atmosphere helps any dinner

cocktails : vodka martinis or wine
snacks : good cheese and crackers
appetizers: ceasar salad
main course: steak or any form of beef with any style of potatoes and a cocktail of veggies
dessert: cheese cake
