I went on two dates with her and her texts became slower in response to mine, the last time we met was 3 weeks ago although she said she wanted tm meet up after that. I haven't bothered to text in the last few days apart from 'merry xmas', which she responded to with the same back. Should I text if only to find out what's going on?

If you like her, you could just text her one more time to ask her out. If she says yes, she obviously likes you. If she ignores it or makes some excuse, then its not looking too great... good luck!
