crepes. Sweet and a great dinner. They don't require to much work and they look very appetizing when served. Plus it will get his sweet tooth going for you. I make mine as cheese blintzes...
Make the crepes...check any cookbook. Mix cottage cheese and cream cheese together with a little sugar. Put the mixture in the crepes, fold them up and heat. Put some sour cream on top with strawberries and your done.
Doesn't sound so good I know, but they are great!

Pasta Alfredo
After the pasta is cooked mix it with 1 cup grated Parmesan cheese, 1 cup half and half and 1 tablespoon butter for every pound of pasta. Mix until the cheese and butter are melted together and serve.
It's easy, takes about 10 minutes once the water boils, and is different enough from pasta and tomato sauce to make an impression. With another five minutes work you can make garlic bread as well, Slice a loaf of french or Italian bread in half, spread butter over it, sprinkle it with garlic, salt and oregano, and put in the oven on 250 just before you put the spaghetti in the pot, and pull it out when the spaghetti's ready to go on the table. Get a bagged salad to toss in a bowl and you have a full meal.

This is great especially if money is no issue. Purchase a standing rib roast appro. 2 lbs. Rub with FRESH garlic being sure to get it in the folds of the meat. Broil aprox. 10 minutes. Immediatly reduce heat to 345 and continue to cook aprox 30 min or to an internal temp of 130 for medium. IMPORTANT: Rest meat at least 15 min before cutting so the meat reabsorbs the juices. The pan juice can be strained or reduced to make an au jus ( with wine or broth) or reduced to make a rich sauce. Best served with potatos and salad. Good luck!

Cooking his favorite meal is always nice if he has one. Or if he has a favorite type of takeout food, you could order that, and set up a nice, romantic dinner setting. Also I am assuming that you two live together, or one of you have your own place. If so, or if not and you two can get some privacy in your homes, you could pamper him, in example bathe him, or give him a nice massage, etc... That would be sweet... Good luck, and have fun!!!

Decorate your dining area with his favorite colors, play his favorite music during the dinner (or a song that the two of you like). Fix something like spghetti, garden salad, and bread sticks, cheap wine with cheesecake for dessert. Can you sing? If so, serenade him and end the song by giving him a BIG smooch. (My BF always enjoys that) or the two of you can dance, play his favorite game.
