Short of hacking their network, you can't monitor chat messages from an external computer. If, however, the conversation is taking place on a computer you have access to, you can install monitoring software that runs quietly in the background and records incoming and outgoing messages. The idea for a keystroke logger isn't bad but, it will only record what's being typed on the keyboard, not what's being said on the other end.
