I'm tryin to connect a DV-R to my tv but my TV only has dvi. I have a HDMI cable and a hdmi to dvi adaptor that I want to use. My question is I believe dvi is video only so what would be the best way to get sound. From optical?

You're on the right track... Optical will give you Dolby Digital/DTS surround as well as stereo, whereas RCA's will only give you stereo (or dolby pro-logic, which isn't great).

Sounds like you pretty much know what you are doing!
Keep it up!

Yes, DVI is video only. So connect your DV-R DVI out to the HDMI input in the TV using you cable and adaptor.

Next to the DVI port in the TV, there is a either a set of RCA audio connectors (Red/white) or most commonly a PC-audio input port (you can get a cheap RCA-to-PC audio adaptor at Radio Shack). Connect the audio out from the DVD-R to that DVI audio port.

Don't connect the optical from the DV-R to the TV! The TV's optical connection is for OUTPUT only. But if you have an audio/video receiver, then connect the optical output from the DV-R to the receiver.
