We're a minority, so we don't get as much press as some larger demographics, but we're out there doing our thing to help.
We help build homes with Habitat for Humanity. We work with our neighbors of faith through Interfaith Alliance. We contribute to canned food drives. We sponsor children through children's charities. We support law enforcement (human justice, with all its flaws, is nonetheless the only justice there is). We vote for those candidates we believe will best represent the interests of our countries.

There were several attempts in the last century. The Soviet Union, Red China, North Korea, North Vietnam and Cuba to name of few. Interesting that each is known for a brutal abuse of humans rights.
At its worst, which would have been the crusades in the 11th century, historians estimate that close to 5 million Muslims, Jewish and Christian were killed in the century (most in the final year 1099 when the Christians recaptured the city of Jerusalem.) Compare that to historical records that who over 118 million dead in the 20th century because of the brutality of the atheist countries. They get over a 23:1 kill ratio victory to the worst religion has ever done.
Also interested that worldwide, surveys show that about 70% of people, outside of those countries, believe in "god". For 70 years Russia was an atheistic country. It would have been into its second and generation of people who were never taught religion, never told about "god", never attended church, never read a Bible or other religion texts. Yet within 2 years of the collapse of the atheistic government, surveys showed that 70% of the Russian population believed in "god". Sounds like their efforts to "stamp out" religion were not ever effective.

Why does it have to be organized? Why can't individual Atheists attempt to make the world a better place on their own?

Most scientists don't believe in a personal god. Many don't believe in any god. If you consider research into increasing crop yields through genetic engineering as an organized attempt, I suppose that would count.
