The local grocery store had a display on center isle at room temperature loaded with 2 lbs blocks of cheese. I pointed out( trying to be helpfulf) that that was probably not safe and they told me they do it all the time.

It's probably naturally cold enough to make it safe for a short time in the store. Your house is a different matter. NEVER leave cheese out at room temperature because of the possibility of salmonella poisoning (cheese has high milk content in it.).

Many cheeses are served at room temperature, as it makes them easier to spread. So I would say that it's safe, but I would put it in the fridge at night at least.

Technically, no. The hazardous temperature for foods is between 41 & 145 degrees Farenheit. After food is left at this temperature for too long a time, microorganisms begin to grow on it and can cause someone to become seriously ill.

Pasturised cheeses are OK to eat, its the rinded soft cheeses and blue cheese that aren't OK as they are have bacteria that can cause listeriosis. Cheddar is a good source of calcium for you, just make sure you buy pasturised every time. It is not harmful to your baby.

its not good for a supermarket to do that. id contact the department of health. Food like that needs to be kept below a certain temperature to slow/prevent bacteria growth. if its kept at room temperature bacteria will grow rapidly and it will go off quickly

Unless the display was made with processed cheese food and or they don't sell the display, it really shouldn't be done.
