You can't sub veg oil for shortening but you can sub margarine for shortening.

It depends on the way you are using the shortening. If you are to melt the shortening first, then yes. But if you are creaming the shortening, no. If you are trying to avoid the hydrogenated oils, use butter if the recipe says cream the shortening.

no. it will give the cookies/whatever it was a greasy texture and they will spread more than you want them to. If its for pastry it will make it too crumbly.
