Meat Sauce for Spaghetti
Ingredients
(6 servings)
3 tb Olive oil
1 lb Ground beef
1 lb Ground pork
1 Onion; chopped
1/2 Green pepper; chopped
3 Cloves garlic; minced
5 c Crushed tomatoes
1/4 c Tomato paste
1 tb Chili powder
2 ts Basil leaves, ground
1/2 ts Ground cloves
3 Bay leaves
2 c Chicken stock
1/2 ts Salt
1/4 ts Cayenne pepper
Instructions
Heat olive oil in a large skillet over medium-high heat. Add beef, pork, onion, green pepper, and garlic and saute until browned, about 10 minutes. With a slotted spoon to drain off the fat, place the sauteed ingredients in a 4-quart saucepan. Add the remaining ingredients and mix well. Slowly bring to a boil, reduce heat, cover, and simmer for 2 hours.

BASIC ITALIAN TOMATO SAUCE
1 lg. onion, diced
2 cloves garlic, minced
1 can tomato paste
2 lg. cans tomato sauce
1 c. water
1/3 c. sugar
Salt and pepper to taste
Cook onion in a small amount of olive oil until onion is golden but not brown. Add garlic and saute 3 minutes longer. Add the tomato paste, tomato sauce, water, sugar, and spices; bring to a simmer very slow until the sauce is thick and a deep red. Serve with meatballs.
Makes about 2 quarts.

I always use bottled Spaghetti sauce. Add three blend pepper and onions. This can be served over spaghetti or on a hoagie roll as a sandwich. I brown the meat first then add the other things after the sausage is done. I have been cooking many years so the easier the better. Good Luck

Here's a really good recipe:
Homemade Italian Sauce
INGREDIENTS
1 (16 ounce) can whole tomatoes
5 cloves garlic, peeled
3 tablespoons olive oil
1 white onion, chopped
1 pound mushrooms, sliced
1 (16 ounce) can crushed tomatoes
8 ounces tomato paste
1 green bell pepper, chopped
2 tablespoons dried oregano
1 tablespoon dried basil leaves
DIRECTIONS
In a blender chop the whole tomatoes with juice and garlic until chunky. In a medium size pot, heat oil on medium high heat. Put onion and mushroom in and saute for about 5 minutes.
Place in pot the blended tomatoes, crushed tomatoes, tomato paste, chopped green peppers, oregano and basil. Bring to boil, then lower to medium low, cover and stir periodically. Cook and reduce about 1 to 2 hours or to your liking.

do this in order , and cook for 7-9 hours on simmer:
evoo & onions sautee in bottom of big kettle
add 6 cans of tomato paste
stir
add 4 cans of stewed tomatoes
cook down (30min)
add fresh oregano
add fresh basil
add 4 cloves garlic smashed
salt and pepper
add 6 cans of tomato sauce
simmer
add 1 cup Evoo
add 1 cup sugar
simmer for 3 hours, stirring occassionally
add 2 more cans of tomato paste
add 1 cup parmesan cheese
1 cup grated asagiao
add sugar to cut acid to taste
make meatballs fresh
add to pasta sauce during 2nd hour

I concur with the other recepies listed, but always make sure your canned tomatos are ROMA, as opposed to regular canned tomatos.
2 cans of roma tomatos (diced)
1 can tomato juice
all the other goods ie: onions (chopped fine)
Garlic
