My office had a party and ordered deli trays. There is a ton of turkey, ham, salami and roast beef (plus lettuce, tomatoes, onions and pickles) left, and some cheese and rolls. I am taking it home as there is no one in the office this week. Outside of making sandwiches, what can I make with it? I don't want it to go to waste, but I'm so sick of sandwiches.

Many of the meats and cheese and tomatoes and onions could be used to make souffles, quiche or omelets. Use the lettuce and tomatoes for salads to go along with them. Put the pickles in jars, cover with water and vinegar, and refrigerate. Freeze the rolls.

Freeze! The leftover meats should keep up to 3 months in your freezer if well packaged.

You can take the meats and use them in soups, stews, etc., maybe a nice turkey noodle soup or casserole sounds good. Ham you can use to season pea soup or any kind of bean soup. Consider adding it to a casserole with some potatoes, thinly sliced onions, green peppers, milk and cheese. Roast beef makes a good soup base, too.

Not sure what to do with the salami or leftover lettuce (yuck). You can freeze the tomatoes and onions to use for ingredients in homemade spaghetti sauce or soup.

You can probably put the leftover pickles into an existing jar of pickles or a jar of vinegar. If you do this, I'd recommend adding some chopped garlic or pickling spice for flavor.

You can also freeze the rolls, but they would have to be well packaged to survive the freezer without tasting funny.

Take the salad stuff and cut it up like to make a salad and shred the turkey and ham for a great salad.You can also make a pasta salad with the salami and cheese.The roast beef, I would freeze and make me a open face roast beef sandwich one night for a quick dinner.The rolls can be frozen and used on New Years Day for sandwiches or at meal time.Salami spreaded with cream cheese and a baby gherkin rolled inside make great appetizers for partys.Freeze it all and use for your New Years Festives....

You can heat the turkey and/or beef in some homemade (or jarred) gravy and serve w/mashed potatoes, biscuits and some steamed veggies.

How about adding some diced peppers and onions and making turkey and cheese quesadillas?

Maybe homemade ham & cheese scones for breakfast or lunch?

Use the ham & cheese and make omelettes for breakfast or dinner.

You could roll the meats and cheese into pinwheels, cut into bite size rolls and serve with crackers for appetizers if you hare having friends over.

Whatever you do, don't keep it for too long. Many lunch meats only have a shelf life of about 5 days.

You could cut-up the meats + cheeses, along with the lettuce and tomatoes and make a huge chef salad. Maybe put the onions, pickles and rolls on the side.

be careful of the turkey that may go bad quick. But what I have done in the past: Take all of your meats,cheese, onions,pickles and tomatoes and put them in a food processor, and grind them all till they are the consistency of ham salad add mayo or honey mustard and use as a spread for crackers or you can bake it like a meat loaf , make meat balls, mix it in a green salad, make patties and cook like hamburgs, or fry and have with eggs, mix in some boiled potatoes and cook like hash. Sounds gross but I'll tell you that it's not. As long as you grind it up you can do anything with it. I eat all that stuff separately, so why not combine it. It really is a great combination of flavors.

You can make hot sandwhiches by chopping up the deli meat, veggies and stir-frying it. Then add in the dairy and pickles. Or you can make burritos with the ham and turkey, onions, tomatos, and cheese. Or an omelette would be delcious with egg, deli meat, onions, tomato and cheese. Even fried rice wouldn't be so bad. Stir togther the ham, onions and other veggies like bean sprouts or if your not into that, red pepper, or green pepper, and add in rice, and stir in egg. Then fry it up and season with black pepper and salt and soy sauce. Yum!

Why don't you invent some kind of new mashed potatoes with little bites of deli meat in it? and top it off with some cheese? Or... you could make some pretty good mac and cheese with those deli slices, just add some vegetables so it has more appeal. I don't know... but sandwiches don't always have to be boring eitheir... have you ever tried grilling bologna? Or, how about trying new breads with your sandwiches? Or tortilla wraps? Make sandwiches for the homeless in your community and pass them out.

or if you want to eat it here are few ideas


1) I would make a chef's salad-lettuce, tomato, cheese, onions, pickles, boil and egg if you like and meat (chop meat and cheese into strips) Add thousand island or ranch dressing

2)Pasta salad Cook pasta add lettuce, tomato, onions and meat.

3)Ham roll-ups
Lay ham flat, spread cream cheese, and place either pickles or onions in center and roll

4)You can freeze the meat

Here's one idea:

Cheesy Turkey with Pasta

INGREDIENTS
1 (16 ounce) package rigatoni pasta
1/4 cup butter
1/4 cup all-purpose flour
1 cup turkey stock
1/2 cup pasta sauce
1 cup water
1/2 (1 ounce) package dry onion soup mix
1 teaspoon crushed garlic
salt and pepper to taste
1/3 cup shredded Monterey Jack cheese
1/3 cup shredded sharp Cheddar cheese
1 pound cooked turkey breast, cubed
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a large saucepan or deep skillet, melt the butter over low to medium heat; blend in flour. Slowly add turkey stock, pasta sauce, and water. Mix well. Stir in onion soup mix and garlic; season with salt and pepper.
Sprinkle in the Monterey Jack, Cheddar cheese and turkey. Stir until the cheese is melted and the meat is heated through. Spoon sauce over pasta and serve.
