TURKEY TETRAZZINI:
2 cups cooked turkey, diced
1/4 cup margarine or butter
1/4 lb to 1/2 lb. fresh mushrooms, sliced
1/4 cup flour
2 cups chicken broth
2 Tablespoons dry Cooking Sherry
1 cup evaporated milk
salt and pepper to taste
8 ounces cooked spaghetti, drained
1/2 cup parmesan cheese, grated
Melt margarine, add mushrooms and cook 5 minutes. Stir in flour. Add chicken broth, sherry and milk. Stir and cook until mixture boils and thickens. Season to taste. Remove from heat. In 2-quart buttered casserole, put alternate layers of spaghetti, turkey, and mushroom sauce; finishing with spaghetti. Sprinkle top with grated Parmesan cheese.
Bake at 400 degrees for 20 to 25-minutes or until bubbly.

This year was my first time to ever cook a turkey and this recipe was extremely easy and I got nothing but compliments. I used a basting brush to put the olive oil mixture on the turkey about every 30 minutes. I used all of the mixture. Also, i don't know if it was the roaster that I was cooking it in, but it only took 2 hours to cook compared to what the directions say. So make sure to keep an eye on it, but try not to open the lid so much that you dry it out. This turkey was sooooo juicy and delicious! I also put an onion inside the turkey.

I got this from allrecipes.com I've gotten a lot of good recipes from this site. They also have a lot more different turkey recipes.

INGREDIENTS
1 (12 pound) whole turkey
3/4 cup olive oil
2 tablespoons garlic powder
2 teaspoons dried basil
1 teaspoon ground sage
1 teaspoon salt
1/2 teaspoon black pepper
2 cups water
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Clean turkey (discard giblets and organs), and place in a roasting pan with a lid.
In a small bowl, combine olive oil, garlic powder, dried basil, ground sage, salt, and black pepper. Using a basting brush, apply the mixture to the outside of the uncooked turkey. Pour water into the bottom of the roasting pan, and cover.
Bake for 3 to 3 1/2 hours, or until the internal temperature of the thickest part of the thigh measures 180 degrees F (82 degrees C). Remove bird from oven, and allow to stand for about 30 minutes before carving.

turkey pot pie

INGREDIENTS
1 recipe pastry for a (10 inch) double crust pie
4 tablespoons butter
1 small onion, minced
2 stalks celery, chopped
2 carrots, diced
3 tablespoons dried parsley
1 teaspoon dried oregano
salt and pepper to taste
2 cubes chicken bouillon
2 cups water
3 potatoes, peeled and cubed
1 1/2 cups cooked turkey, cubed
3 tablespoons all-purpose flour
1/2 cup milk
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C). Roll out bottom pie crust and place in the 10 inch pie pan and set aside.
Place 2 tablespoons of the butter in a large skillet. Add the onion, celery, carrots, parsley, oregano, salt and pepper. Cook and stir until the vegetables are soft. Stir in the bouillon and water. Bring mixture to a boil. Stir in the potatoes, and cook until tender but still firm.
In a medium saucepan, melt the remaining 2 tablespoons butter. Stir in the turkey and flour. Add the milk, and heat through. Stir the turkey mixture into the vegetable mixture, and cook until thickened. Pour mixture into the unbaked pie shell. Roll out the top crust, and place on top of filling. Flute edges, and make 4 slits in the top crust to let out steam.
Bake in the preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and continue baking for 20 minutes, or until crust is golden brown.

my aunt makes strogonoff with turkey breast fillets

basically all u do is brown an onion in olive oil with garlic
add your strips of turkey fillet
some red/green chilli, ginger paste and salt to taste
allow to simmer til the meat is cooked
add a small portion of baby button mushrooms tht have been halved and allow the mushrooms to steam 4 a while
add a tub of double cream and a grinding of white pepper to taste and allow the sauce to thicken

serve over veggie rice or buttered noodles garnished with fresh parsley

My favorite is turkey pot pies. I made them after thanksgiving and my pickey family just loved them.
I bought the paster in the dairy department at my supermarket (by the canned biscuits ) and I lined my pie pan with one of them. Chopped up my leftover turkey and added sauted onion, mushroom, celery, and carrots, added some salt and pepper to taste. Then I got a can of cream of mushroom and a can of cream of chicken soup mixed it all together added that to my pie pan and covered with the other pie crust baked for about 30 min. or until it is browned and voila you now just made turkey pot pies. Yummy.

4 slices peasant bread (or any other favorite bread)
6-8 slices turkey
2 tablespoons Miracle Whip
2 tablespoons honey mustard
6 pieces cooked bacon
romaine lettuce
1 medium tomato
4 slices provolone cheese



1. Lightly toast the bread
2. Cook the bacon
3. Cut the tomato into slices
4. Spread miracle whip on one side of bread
5. Spread honey mustard on the other side
6. Add the romaine lettuce, tomato, bacon, cheese and turkey
7. Cut the sandwich in half.

Turkey Hash

Serves 4

Preparation :15 Cook :25 Stand :00 Total :40

Ingredients:

3 russet potatoes, washed and diced 1/4"
4 slices bacon
8 ounces cooked turkey
3 tablespoons red onions, diced 1/4"
2 tablespoons red pepper, diced 1/8"
Salt, to taste
Peppercorns, freshly cracked
Paprika

Cook the bacon in a large skillet until very crispy. Remove the bacon and drain it on a paper towel. Once cool, chop the bacon into small pieces. Reserve.

Add the potatoes to the pan and cook for 10-15 minutes until they begin to brown and get crispy. Push the potatoes to one side of the pan and add your onions and peppers. Cook for 3-4 minutes and add the turkey. Cook for one to two more minutes and stir all together. Season the hash with salt and cracked pepper. Color with the paprika. Add the chopped bacon pieces. Stir again.

Place a generous pile of the hash in the center of four warm plates and top each pile with 2 eggs over-easy.

Rosemary Turkey Salad

Ingredients

(2 servings)

1/4 c Mayonnaise
1/4 c Chopped Fresh Parsley
1 tbsp. Fresh Rosemary Leaves
1/8 tsp. White Pepper
1 1/2 c Cooked Turkey
1 lg. Granny Smith Apple or Red Bartlett Pear, Cored And Shredded
2 lg. Leaf Lettuce Leaves
1 c Alfalfa Sprouts


Instructions

Combine Mayonnaise, Parsley, Rosemary & Pepper. Add Turkey & Apple. Toss Gently. Cover & Chill Until Ready To Serve. Place Lettuce Leaves On Individual Serving Plates. Top Each with 1/2 C. Alfalfa Sprouts. Spoon Half Of Turkey Mixture onto Each Plate & Serve Immediately.


Turkey Curry

Ingredients

(4 servings)

1 tbsp. Canola Oil
2 tbsp. Onion, chopped
1/4 c Chicken broth
3/4 c Sour cream
2 tbsp. Curry powder
1 tsp. Cayenne pepper
1/2 tsp. Cumin
1/2 tsp. Ginger
1/2 tsp. Ground turmeric
1/2 tsp. White pepper
1/2 tsp. Parsley
1/2 tsp. Ground coriander
1 lb. boneless cooked turkey, Sliced
2 c Steamed rice


Instructions

Heat oil in a medium skillet. Add the onions and cook over medium heat until softened, but not browned. Drain fat from skillet and add remaining ingredients, except turkey and rice. Mix well, bring to JUST a boil, add the turkey and simmer for 4-5 minutes to heat through. Place turkey over rice and pour sauce over turkey. Serves 4.


Turkey Vegetable Stir-Fry in the Microwave!

Ingredients

(4 servings)

1 tbsp. Cornstarch
2 tbsp. Soy Sauce
1/4 tsp. Ground Ginger
1 (10 1/2 Oz.) Can Chicken Broth
1 Carrot Cut Into Julienne Strips,
2 tbsp. Vegetable Oil
2 c Sliced Mushrooms
4 Green Onions Minced
1 Stalk Celery, Diagonally Sliced
1 (6 Oz.) Pkg. Snow Peas, thawed
2 c Coarsely Chopped Cooked Turkey Breast
2 c Brown Rice Cooked
2 tbsp. Silvered Almonds Toasted


Instructions

Combine cornstarch, ginger, chicken broth & soy sauce in a 2 Cup glass measure. Stir well. Microwave uncovered at high 2 To 3 min., or until thickened, stirring every 30 seconds. Set aside.

Combine carrot & oil in a 2 1/2 quart Casserole. Cover with plastic wrap; Microwave at high 1 To 2 min. or until carrot is Crisp-Tender. Stir after 1 min. Add mushrooms, onions & celery. Microwave uncovered at high for 1 To 2 min.; Stir well. Add soy sauce mixture, snow peas & turkey; Stir well. Microwave at high 2 to 3 min ; Stir.after 30 seconds.

Serve over rice. Garnish with almonds.
