Could try & save it by using it in a tomato pasta sauce, use for chili or perhaps turning it into a Jamacian pulled pork.

I would make carne adovada. Although I usually make it with uncooked pork, it can be done with cooked meat. You could also slice it very thinly and heat it in a gravy.
