i am sick of eating frozen dinners and macaroni and cheese.

Tacos are easy to make; you just need the following:
Ground Beef or Turkey
Taco Seasoning (comes in a packet for about .75 cents)
Taco Shells
Salsa, Cheese, Tomatoes, Sour Cream, Lettuce (all optional)

Cook the ground meat in a frying pan until brown (10-15 min) on a med flame.
Once brown add the taco seasoning & 3/4 cup of water, mix & turn flame down low & let simmer for 15 min, stirring every now & then.
You can microwave the taco shells, but the taste better if you put them in the oven: 400 degrees for 10min on a cookie sheet.
Once the meat is done, you ready.
Fill the shells & enjoy.

Oh, there is so much you can make that's simple and easy! Cooking is easy and almost fail-proof.
I like a simple Goulash- ground hamburg fried in a fry pan until well done (low-med heat), then add some salsa of your choice. In a separate pot boil (high heat) some macaroni until cooked - ensure the pot is big enough for 2x water compared to macaroni. Once the macaroni is cooked add it to the fry pan with the hamburg and add some frozen corn. Heat for about 5 minutes and serve.
Once comfortable making this dish, be creative and add some spices to your liking - perhaps celery seed, onion powder, garlic powder, parsley flakes, or oregano flakes. Try not to use onion or garlic salts as your dish will be salty tasting. This meal should be ready in about 15 min from start to finish and leftover goulash can be used to make spaghetti sauce for another meal - take leftover goulash and heat in a pot and add 1 can of pasta sauce or tomato sauce. Boil some more macaroni or spaghetti noodles if you wish to add it to it.

Here is a guideline you can use:
1 lb lean hamburg
1 cup raw macaroni
1 cup frozen corn or 1 small can kernal corn, drained
salsa to taste

As an alternative to spaghetti, you could add 1 small can (10 oz or so) of tomato sauce to your leftover goulash. Mix sauce and goulash together and pour into a baking dish. Smother the mixture with cheese and cover with lid or tinfoil and place in oven, at 350 F, and bake for 30 minutes until thoroughly heated. Pick up a garlic bread loaf from your local grocery store bakery or frozen section and follow directions on package. Bon appetit, my friend.

Get a metal 10 or 12 inch diameter 2 1/2 or 3 inch deep glass covered dish at Wal mart or other fine store. One of those non-stick kind. This is your universal cooking pan for anything. Try boneless-skinless chicken breast and spray the pan with PAM nonstick spray. Put some cajun spice or any spice you like or salsa on the top of the chicken and put the electric burner on 2. Go watch t.v. When you start to smell it go check it. Just keep an eye on it. after about a half hour turn it and let it cook another twenty or twenty-five minutes. Put some spice or salsa on the reverse side after flipping it. It takes a while to cook it on 2 but it will be perfect and you won't have to watch it. When it is about done start steaming some fresh vegetables or some frozen ones. Serve with some Texas toast. You can do this with any kind of meat and it is a no brainer. It is cooking without having to think about it. Use your sense of smell to determine the time to check on your cooking. You will get used to the length of time it takes to cook as time goes by. Also buy a cooking bag and learn how to cook pot roast with one. It is also carefree. A crock pot is a good way to go and they usually come with recipes.

Turkey Vegetable Stir-Fry in the Microwave!

Ingredients

(4 servings)

1 tbsp. Cornstarch
2 tbsp. Soy Sauce
1/4 tsp. Ground Ginger
1 (10 1/2 Oz.) Can Chicken Broth
1 Carrot Cut Into Julienne Strips,
2 tbsp. Vegetable Oil
2 c Sliced Mushrooms
4 Green Onions Minced
1 Stalk Celery, Diagonally Sliced
1 (6 Oz.) Pkg. Snow Peas, thawed
2 c Coarsely Chopped Cooked Turkey Breast
2 c Brown Rice Cooked
2 tbsp. Silvered Almonds Toasted


Instructions

Combine cornstarch, ginger, chicken broth & soy sauce in a 2 Cup glass measure. Stir well. Microwave uncovered at high 2 To 3 min., or until thickened, stirring every 30 seconds. Set aside.

Combine carrot & oil in a 2 1/2 quart Casserole. Cover with plastic wrap; Microwave at high 1 To 2 min. or until carrot is Crisp-Tender. Stir after 1 min. Add mushrooms, onions & celery. Microwave uncovered at high for 1 To 2 min.; Stir well. Add soy sauce mixture, snow peas & turkey; Stir well. Microwave at high 2 to 3 min ; Stir.after 30 seconds.

Serve over rice. Garnish with almonds.

Speedy Weeknight Chili - done in 30 minutes

1 1/2 lbs ground beef
2 small onions
1/2 green pepper - chopped
2 cans kidney beans (16 oz each)- drained
2 cans stewed tomatoes (14 1/2 oz each)
1 can crushed tomatoes (28 oz)
1 Bottle beer (12 oz)
1 can tomato paste (6 oz)
2 packs of ready made chili seasonings (mild or hot)

In a large sauce pan or dutch oven, cook the beef, onions, green pepper & garlic over medium heat until meat is no longer pink; drain. Add remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.

Broiled Tilapia Parmesan

INGREDIENTS
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets
DIRECTIONS
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

Put several chicken breasts in a casserole dish and cover with your favorite barbeque sauce. Bake at 350 for 30 minutes, remove from oven and check to be sure they're done (cut into the thickest part, flesh should be completely white). If not, return to oven in 5 minute increments.

Shuck one ear of corn and boil while the chicken is baking.

For spicy, I'd go Italian. Buy a jar of your favorite spaghetti sauce and spicy Italian sausage at the supermarket. Mix sauce, red pepper flakes to taste (err on the cautious side), 1/2 tsp. garlic powder, and 1 tablespoon Italian seasoning mix in saucepan. Cover and simmer over medium-low heat.

Remove sausage from casings and fry as you would ground beef. Drain and add to sauce. Simmer one hour. Serve over pasta.

Take chicken breasts. season them with salt and pepper. Mix a can of Cream of Mushroom soup with a 1/4 cup of white wine and about a 1/4 cup of milk. Stir in a jar of drained cocktail onions, and add a handfull of frozen peas. put some of the mix on the bottom of a casserole dish, and lay the chicken in it. Pour the rest over the top. sprinkle a bit of cheddar cheese over the top, and cover it with foil. Bake for about 1 hour, or until the chicken is completely cooked. Since you like spicy foods, it is great with hot sauce sprinkled on top. Easy.

I'm not a huge spicy dish fan, but you could make pasta with spicy italian sausage:

Take a couple of links of the sausage and brown until cooked through. Slice and continue to sautee with whatever veg you like (mushrooms, onions, peppers). Add sauce to sausage/veg mixture and pour on top of cooked pasta or rice. Serve with some garlic bread.

Curries are also apparently quite simple to make, but I'm allergic o.O

Try Beef-a-roni.
1.) Brown some ground beef in a frying pan.
2.) Mix up a box of macaroni and cheese as per directions on package.
3.) Add browned ground beef and a tin of tomato soup to the macaroni and cheese and bake in the oven at 325 F for 45 minutes.
