My Fiance's parents live in Germany and don't speak english, should we have two weddings? One overseas, and one hear, or should we try to bring every one to one place?

1 wedding, 2 small receptions, if you can afford it.

Either will work. Just know that doing 2 weddings or multiple receptions is time consuming. Know your limits and what you are willing to do.

My matron of honor has family in Europe and NZ (she lives in NZ) and they had a wedding in NZ and a wedding in Europe 6 months later.

I have family in the US & Europe, my husband's family is in NZ and we live in the US. We had a wedding in Europe and a reception in the US one month later. By the time we got to the reception I was all "wedding'd" out. It's a lot of work.

As for the language barrier, most of my family doesn't speak English and they somehow found ways to communicate and really bond with the NZ family.

You can be married only once, so choose wisely. Once you exchange the vows, you're married. You can have a ceremony and reception in one place and then another reception in the other country, or get everyone together for the ceremony and the same party, but only one ceremony.
Think about your parents, friends and family witnessing your exchange of vows, which is the most important part of the wedding. As a mother, that would be the part of my child's wedding I wouldn't want to miss. Probably your parents will feel the same.

You could try to do 2 weddings, but that will get very expensive. Have his parents and family come to the states and get a German translator...it will definitely add that personal touch to the wedding and will show his family that you care.
