first buy an ice cream churn then try this great recipe

Vanilla Ice Cream

3 cups half-and-half
1 cup heavy cream
8 large egg yolks
9 ounces vanilla sugar
2 teaspoons pure vanilla extract

Place the half-and-half and the heavy cream into a medium saucepan, over medium heat. Bring the mixture just to a simmer, stirring occasionally, and remove from the heat.
In a medium mixing bowl whisk the egg yolks until they lighten in color. Gradually add the sugar and whisk to combine. Temper the cream mixture into the eggs and sugar by gradually adding small amounts, until about a third of the cream mixture has been added. Pour in the remainder and return the entire mixture to the saucepan and place over low heat. Continue to cook, stirring frequently, until the mixture thickens slightly and coats the back of a spoon and reaches 170 to 175 degrees F. Pour the mixture into a container and allow to sit at room temperature for 30 minutes. Stir in the vanilla extract. Place the mixture into the refrigerator and once it is cool enough not to form condensation on the lid, cover and store for 4 to 8 hours or until the temperature reaches 40 degrees F or below.

Pour into an ice cream maker and process according to the manufacturer's directions. This should take approximately 25 to 35 minutes. Serve as is for soft serve or freeze for another 3 to 4 hours to allow the ice cream to harde

Vanilla Ice Cream

6 egg yolks
3/4 cup sugar
1 1/4 cups milk
1 1/4 cups heavy cream
1 1/2 large vanilla beans
1/2 teaspoon vanilla extract
1 pinch salt

Cream the egg yolks and sugar together in a mixing bowl until thick and light.

Combine the milk and cream in a 2-quart microwave-safe casserole. Cut the vanilla beans in half lengthwise, and scrape the seeds into the bowl. Add the beans, extract, and salt. Cook, uncovered, at full power (650 to 700 watts) for 3 minutes. Remove the vanilla beans. With a mixer running on low speed, slowly add the milk mixture to the egg yolk mixture, stirring until smooth. Return the mixture to the casserole.

Whisking once a minute, cook until the custard is thick and coats the back of a spoon, 3 1/2 minutes. Do not overcook it.

Allow the custard to cool to room temp. Then refrigerate it, loosely covered, until chilled, a minimum of 3 hours.

Freeze in an ice cream maker according to manufacturer's directions.

Makes 5 cups.

French Ice Cream

3 cups milk
1 1/2 cups light corn syrup
1 1/2 tablespoons Argo or Kingsford's Cornstarch
3 egg yolks
Few grains salt
1 1/2 teaspoons vanilla
1 cup heavy cream
1/2 cup sugar

Scald milk, Karo and sugar and thicken with the cornstarch dissolved in an equal quantity of cold milk. Cook fifteen minutes, stir in the egg yolks well beaten and combined with a little of the thickened mixture. Chill, add salt, flavoring and cream, and freeze, packing with three parts of cracked ice to one of rock salt.

An easy way is to prepare the ice cream mix and then put it into your freezer. Set a timer for every 15 minutes. Stir the ice cream mix thoroughly every 15 minutes until it is just right. This works great with most dairy based ice creams. My fav is mango.

for Ice cream making you need to be familiar with a technique to temper egg yolk (use about 6). You do that by slowly mixing hot heavy cream or milk (Use about 4 cups) to the egg yolks and stirring non stop. once you get them at the same temperature of the milk you can pour them back into the milk pan and keep cooking add about half cup of sugar for two cup of milk, add some vanilla flavor (as much as you like but one tablespoon is enough).
Let cool in the refrigerator for one or two hours and pour it into your Ice cream machine take about 30 min to be done.

while mixing in the Ice cream machine you can add a tablespoon of pepermint oil and some crushed chocolate candy and a tablespoon of green food color for mint chocolachip ice cream.

Homemade Ice Cream Vanilla Ice Cream Recipe

Here are two different kinds of recipe for Homemade Vanilla Ice Cream. The first is made with a custard base (eggs and cream) and the second is a 'quick' recipe ideal for kids!

Custard base recipe
Ingredients:
4 egg yolks, 1/2 pint (250ml) milk, 1/2 pint (250ml) double/heavy cream, 4 oz (100g) sugar or caster sugar, 2 teaspoons vanilla extract (or according to taste - everyone's different!)

First of all scald the milk (bring slowly up to boiling point in a saucepan). Separately, mix together the egg yolks and sugar until thick. Pour into this the hot milk, whilst continuously stirring. Then pour the mixture back into the pan and heat gently, stirring until the custard thickens - DO NOT BRING TO THE BOIL OR IT WILL PROBABLY CURDLE. When you can see a film form over the back of your spoon it's time to remove the saucepan from the heat. Leave to cool. This is the custard base and one you can use in many other recipes. When the custard base is cold, stir in the cream and vanilla extract, then transfer the whole mixture into an ice cream maker and freeze according to the manufacturer's instructions

Strawberry Ice Cream Recipe
Ingredients:
3 egg yolks (beaten),
1/2 (250ml) pint milk,
1 pint (500ml) double/heavy cream, 4 oz (100g) sugar,
2 cups of strawberries,
1 teaspoon of vanilla essence, 1/4 teaspoon saltTake the strawberries and mash them in with half the sugar (ie. 2oz or 50g). Place to one side. In a separate saucepan, mix the egg yolks with the milk, salt and the remaining sugar. Place over a medium heat just to boiling point (stirring all the time). Do NOT let it boil.

Transfer the mixture into a chilled bowl to cool - refrigerate for up to 3 hours, remembering to stir the mixture from time to time. When cool, stir in to the mixture the cream and vanilla essence and then add to this the strawberry/sugar mixture.

Transfer the complete mixture into an ice cream maker and follow the manufacturer's instructions.


Chocolate Ice Cream Recipe

Custard base recipe
Ingredients:
5 egg yolks, 1 pint (500ml) milk, 1/2 pint (250ml) double/heavy cream, 2 oz (50g) sugar, 3 tablespoons of cocoa powder

Create a custard base (see instructions from the vanilla ice cream recipe) - and at the point where you remove the saucepan from the heat to allow the mixture to cool, add the cocoa. Then chill the custard until it's really cold. Once chilled, mix until slushy. Add the cream (whipped) and make sure it mixes in well. Transfer the mixture in an ice cream maker and freeze according to the manufacturer's instructions.

Quick chocolate ice cream recipe
This is ideal for the kids or anyone wanting something quick and delicious!
Ingredients:
5 tablespoons of cocoa, 1 can (large) condensed milk, 1/2 pint (250ml) milk

Mix together the milk and condensed milk. Dissolve the cocoa in a little hot water. When fully dissolved stir it into the milk/condensed milk mixture. Transfer the whole mixture into an ice cream maker and freeze according to the manufacturer's instructions.

Banana Ice Cream Recipe

(simple and quick - ideal to make for the kids!)


Ingredients:
3/4 pint (375ml) milk or cream or a mixture of both (according to taste), 4oz (100g) sugar, 3 ripe bananas (to purée)

Purée the bananas place in a mixing bowl. Pour in the milk/cream and sugar, mixing in well as you do so. Transfer the whole mixture into an ice cream maker and freeze according to the manufacturer's instructions.



Honey Ice Cream Recipe

Ingredients:
5 egg yolks, 1 pint (500ml) milk, 1/2 pint (250ml) double/heavy cream, 1/2 cup honey, 1 teaspoon vanilla essence

Beat together the egg yolks and honey in mixing bowl. Heat the milk in a saucepan until it reaches boiling point, then simmer. Whilst it's simmering stir in the egg yolks/honey mixture. Continue to stir until it thickens.

Remove from the heat, strain and leave to cool.

Stir in the cream and the vanilla essence and then transfer the whole mixture into an ice cream maker. Freeze according to the manufacturer's instructions.

I never knew how, so I would get ice cube trays, pure some soda in there. Put toothpicks and I would have delicious Popsicles! Better than the actual ones, too!
