I have fried a 16 lb. turkey in a deep fryer using peanut oil. Do I have to throw out all of the oil after one use, or can i strain it or something, so that I can reuse it another time. Also, how long is the used oil good for before it needs to be thrown out?

You can reuse the oil several times. For people worried about bacteria, yes a raw turkey was in the oil but you're forgetting that the oil was probably 350-400*F and the turkey was fully cooked when it came out. Food borne bacteria cannot withstand those kinds of temperatures. 140*F is the max temperature for it to survive. Let the oil cool, strain and store it in the original container. Peanut oil will usually last a year. Keep it at room temperature. Oil is much more resilient than we give it credit for. If restaurants had to change their frying oil every night, the prices of fried foods would increase exponentially. Cheesecloth is a great filter. Make sure you filter it well, maybe even two or three times, especially if you seasoned your turkey. The seasonings will sour the oil faster.

Wow, 2 thumbs down for the suggestion of using it as a fuel. Must be everyone has stock in the petrolium industry. Peanut oil runs great in a diesel engine, better than petrolium diesel. In fact the 1st diesel every, invented by Rudolph Diesel ran on peanut oil.
As far as reusing it after frying, we cold filter it, through a pair of used, worn out Levi Jeans(throughly washed), after a through heating to get the sedemints to the bottom of the fryer. Then if the oil isnt going to be used for a while, it should be stored in a cool place or frozen. The oil can be reused several times, if it smells funny after sitting, Don't use it for cooking, instead mix it in with the diesel in your truck, don't run it straight, but a 30(oil)/70(diesel) mix wont hurt anything, even in western NY in the winter

Cooking oil goes through stages. After one use it is just getting broken in. I have cooked several turkeys in the same oil and the best ones are about the third or fourth time you use the oil.

You can strain it if you have something to pour it over into. We usually cover the pot to keep any foreign matter out and then skim it before the next use.

Depending on how many contaminants you eventually get in the oil it will cook several turkeys. As it gets old it will turn darker and give off a burnt odor. That's when it's time to change.

The next turkey you cook will come out darker and crispier on the outside and each one after will get a little darker.

Get a fryer that has temp. control, this keeps you from burning the oil. My fryer has a drain that leaves a little oil in the bottom. After I cook my turkey I let the oil set overnight, this lets all the spices settle to the bottom. Drain and put in the freezer, This will let you use oil several times. When the oil gets real dark it's time to throw it out.

Filter the oil by pouring it thru the filter papers people use for electric coffee makers (put the filter in a sieve and it's easier to hold.) This strains out any pieces.
Place in a glass jar. You can use it two or three times, unless it turns dark and starts to smoke when you heat it. Then you need to toss it.

I have never deep-fried a turkey but my senses are screaming Nooooo! Once you have used the oil for meat products it should be chucked out because of all the bacteria in and on the turkey which once they reach a certain temperature would reproduce like wildfire and you or the next user of this oil would be terribly ill.

Please do not do it. It would not be worth it.

you can strain the peanut oil with the strainer and put coffee filter on the top of it, so you can get a clean oil.
So, You can reuse it another time.

as long as the penut oil is used to cook turkeys only, you may get two or maybe three uses out of it.
Getr id of the oil, if it turns yucky and weird

You can use up to 3 times. but keep t on a cool dark place (Like your refrigerator) after you used the first time.
