There's a puddy-like coating around brie cheese, and I need to know what it is and if you can eat it or not. Does it taste good? Are you supposed to serve it with the white stuff still on it? How do you get it off?

The white coating on brie is simply the rind of the cheese itself, resulting from the treatment and exposure of the outer surface, not really a separate thing. It's perfectly edible and it's meant to be left on the cheese when the brie is served. It tastes fine as far as I'm concerned, although you could peel it off with a small, sharp knife or a cheese plane if you like. The trouble with removing it, however, is that brie is a very soft cheese and would be difficult to cut or handle without the rind to give it structure.

Its a mould that helps the cheese to mature, it grows with it as it matures, it is edible but has more of a bitter taste than the cheese itself, it gives the cheese a bite in texture & flavour.
I recommend trying a little at a time and eventually u will acquire the taste & u may come to love it, its all down to ur own taste in the end.

hope this helps, enjoy

The the "rind". It's fine to eat. Perfectly safe. I actually like it.

Yes, you eat it with it on. I like it, for me it's the best bit! I like its texture.

I don't know what it's called though.

Wikipedia calls it a white mouldy rind and confirms that its edible
