In water resources, if other physical and chemical conditions are optimal, excessive amounts of nutrients can lead to degradation of water quality by promoting excessive growth, accumulation, and subsequent decay of plants, especially algae. Some nutrients can be toxic to animals at high concentrations.

Six nutrient groups exist, classifiable as those that provide energy and as those that otherwise support metabolic processes in the body:Some of them are essential because they cannot be synthesized in the body and must be obtained from a food source.

The most broad answer is any chemical or substance that an organism (like humans) take in to help their bodies work properly. I don't know if you are able to use wikipedia for your project, but it has a lot of nice information on different vitamins and minerals and what they do in people's and animals' and plants' bodies.
