Wasabi Sesame Dipping Sauce
You can adjust the heat of this sauce simply by adding or subtracting the Wasabi paste.
Ingredients:
2 tablespoons Wasabi powder
1/2 cup soy sauce
1 teaspoon sesame oil
1/2 lemon, juiced
1 tablespoon toasted sesame seeds
Preparation:
Mix the Wasabi powder with enough cold water to make a stiff paste. Let it mature for 30 minutes to develop its heat. Whisk in the soy sauce, oil, and lemon juice. Add the sesame seeds just before serving. Serve the sauce on the side for the timid tasters.
Orange Ancho Chile Barbecue Sauce
Here's a fun BBQ sauce. It's got a great flavor and will WOW your guests. Make some chicken K-Bobs with thigh or breast meat and place fresh cubes of pineapple between the chucks. Baste during the last few minutes and serve with a little warm sauce on the side. Great as an entrée or as a fun appetizer. If you are using bamboo skewers remember to soak them for thirty minutes before putting the meat on them. This will stop them from burning up on the grill.
Makes 4 servings
Ingredients:
1 cup orange marmalade
1 cup tomato sauce
2 tablespoons red wine vinegar
2 tablespoons ancho chile powder
1 teaspoon garlic, chopped
1/2 teaspoon salt
1/4 teaspoon cayenne
1/4 teaspoon cumin, ground
Preparation:
Combine marmalade, tomato sauce, vinegar, ancho chile powder, garlic, salt, cayenne, and cumin in a small saucepan and stir to incorporate. Heat sauce to a boil, stirring often. Simmer for 2 minutes, and let cool completely.

Good sauce? My quick and easy is:
1 cup mayonnaise (homemade or Best Foods [Hellman's]
1 tsp to 1 tbsp curry powder
thin with lemon juice.
Chill.
Use a vegetable dip, meat sauce, or salad dressing.

When my husband and I were dating, I made a special meal for him- Including a cake with blackberry sauce.
It was actually very easy, if a bit messy: I washed my berries off well, then put them in a large pan with about a cup and a half of sugar, and just enough water to cover them. And a dash of salt. And I simmered them, stirring occasionally until the sauce reached a syruppy consistency.

Yeah Hollandese sause is good with begetables, fish and white meat too I am sure. So that might be what you want. Also biurre blank sauce is good with meat and vegetables.
