I am making quesadilla today for the first time and i wanna know how to make a tortilla , its not available in the market as i live in India . Please tell

Homemade Flour Tortillas

Makes 12 tortillas

Ingredients:

3 cups unbleached flour
2 teaspoons baking powder
1 teaspoon salt
4 to 6 tablespoons lard
about 1 1/4 cups warm water

Preparation:

Mix dry ingredients in a large bowl.

Add the lard. Use a fork or a pastry cutter to cut in the shortening or just do it the old fashioned way and use your hands.

Next add warm water a little at a time until your dough is soft and not sticky. You do not need very hot water. Knead the dough for a few minutes. Pull off pieces of dough to form about 12 small dough balls. Let them rest for at least 10 minutes, or up to 30 minutes.

Now you can roll out the dough with a rolling pin. It is a good idea to dust each ball with a little flour just before you roll them out. Roll them out fairly thin.

Lay your tortilla in a medium hot skillet. It takes just a few seconds to cook. Flip to the other side. When they are done it should have lots of nice brown speckles. Place them in a towel. If you would like you can use a tortilla warmer to keep them warm longer.

They are ready to be served!

Ingredients:
2 cups Masa or Instant Masa (or Corn Meal)
1 1/3 cup Water (more or less as needed)




Directions:

Mix together masa and enough water to form a soft dough. Knead on a surface sprinkled lightly with extra masa until smooth and elastic.

Divide dough into 15 equal portions and shape into balls. Cover with plastic wrap or a damp kitchen cloth

Roll out a portion to a 15 cm - 18 cm diameter between two pieces of waxed paper, or pat out by hand to form a tortilla. Repeat with remaining portions.

Keep tortillas soft, covered with damp kitchen cloth, until required. Preheat a heavy-based fry pan over a medium heat.

Cook tortillas for about 30 sec each side or until speckled and cooked through. Stack cooked tortillas in a basket or bowl and cover to keep them warm and flexible.

Note: You can use any meat you want, but this was the most available at the time I researched it.

Tortillas



Ingredients

2-3 cups flour

1/2 teaspoon of baking powder

1/2 teaspoon of salt

1-2 cups of warm water

3-4 tablespoons of lard


Directions

Mix all the ingredients up. Roll out the tortillas (there are also tortilla makers) and cook on a flat skillet. Cook on both sides.

It is similar to roti made with flour and water rolled very thin and cooked on a hot pan for less than a minute on each side.
Mix dry ingredients in a large bowl.

Add vegetable shortening or lard. Or use a combination of half lard, half shortening.
Use a fork or a pastry cutter to cut in the shortening or just do it the old fashioned
way and use your hands.

Next add warm water a little at a time until your dough is soft and not sticky. You do
not need very hot water.

Knead the dough for a few minutes.

Now you will pull off pieces of dough to form about 12 small dough balls. Let them
rest for at least 10 minutes, longer if you like.

This is a good time to heat up the comal. You will want to set it at medium to high
heat. If it is too hot the tortillas will cook too fast.

Now you can roll out the dough with your tortilla rolling pin or palote. It is a good
idea to dust each ball with a little flour just before you roll them out. Lay the palote
in the center of the dough ball and roll up, center and roll down. It is good to lift the
dough and turn it. Again, rolling pin in the center and roll. Roll them out fairly thin.

Lay your tortilla on the hot comal. It takes just a few seconds to cook. Flip to the other
side. When they are done it should have lots of nice brown speckles. Place them in a
towel. If you would like you can use a tortilla warmer to keep them warm longer.
They are ready to be served!

Chewy Flour Tortillas

These tortillas have real body and taste; they are perfect for gorditas, fajitas and eating out of hand.

2 C All-purpose flour
1-½ t Baking powder
1 t Salt
2 t Vegetable oil
¾ C Lukewarm milk (2% is fine)
Stir together the flour and baking powder in a large mixing bowl. Add the salt and vegetable oil to the lukewarm milk and whisk briefly to incorporate. Gradually add the milk to the flour, and work the mixture into a dough. It will be sticky.

Turn the dough out onto a surface dusted with flour and knead vigorously for about 2 minutes (fold and press, fold and press). The kneading will take care of the stickiness. Return the dough to the bowl, cover it with a damp cloth, and let it rest for 15 minutes. (This dough will not rise, but it needs a rest.)

Divide your dough into 8 balls of equal size, cover them, and let them rest again for about 20 minutes. Avoid letting them touch, if you don't want them to stick together.

Dust your work surface with flour. Working one at a time, remove each piece of dough and pat it into a 5-inch circle. With a rolling pin, roll out the tortilla, working from the center out, until you have a 7- or 8-inch tortilla a little less than ¼-inch thick. Transfer the tortilla to a hot, dry skillet or griddle. It will begin to blister. Let it cook for 30 seconds, turn it, and let the other side cook for 30 seconds. Remove the tortilla, place it in a napkin-lined basket and cover with aluminum foil. Repeat for the remaining tortillas.

Although flour tortillas, like corn tortillas, are best if eaten right after they are made, these tortillas will freeze well. Wrap them tightly in plastic, and they will keep, frozen, for several weeks. To serve tortillas that have been frozen, let them thaw and come to room temperature, then wrap them in aluminum foil and heat them in a warm oven. Microwaving tends to toughen them.

Tortillas De Harina (Flour Tortillas):

3 cups flour
3 tablespoons shortening or lard

1 pinch sugar
1 cup water (lukewarm)



1. Mix flour, shortening, baking powder, salt, and sugar.
2. Gradually stir in water until crumbly dough forms.
3. Work with hands until dough holds together.
4. on a floured board, shape into a ball and knead until smooth.
5. Divide dough into 12 roughly equal parts.
6. roll into sphere and let stand for 15 minutes.
7. Use a rolling pin to flatten into 8 inch circles.
8. Cook on ungreased griddle on medium heat, to cook, when it starts to bubble, flip it over, when it starts to bubble, pat it down with a clean towel or spatula, when the entire tortilla starts to inflate, take it off the grill.

You use flour and water. Then you kneed it for a little while, or until all the stuff is mixed in, you can add more water if you want. Then you seperate it in to balls as big as you want them to be. On your skillet you put a little bit of cooking oil in the bottom and cook them for 30 seconds.
