I am staying at the Royal Plaza, right above the MongKok MTR.

While the airport express is connected to the MTR, it's NOT the best way for 4 people with luggages. Yes, the subway will take you to the Mong Kok station, but just try to haul your luggages from under ground to the hotel through the escalators and then pass the streets while keeping the group together. In HK, Mong Kok is crowded even at 11:00 pm.
I advice you use the hotel airport shuttle, the cost is more but you will be transported to the doorstep of the hotel without first exchanging for HK$ (MTR does not take US$), buy Octopus cards, all the MTR stops, transfers etc and having to drag your luggages around looking for the hotel. But check the below links for info. before you decide for yourself.

The fastest way is to take the Airport Express from Airport to Hong Kong Central, then take an MTR going to Mongkok Station. Cost HKD90 per person and travel time around 20 minutes.
Cheapest Fare is through the Airport Bus (A21) HKD33 per person and travel time around 50 minutes.

Which hotel are you staying at?
Airport express would be good, it gets you to town in 24 minutes, and they come at 12-minute intervals.
Depending on where your hotel is,
you choose the stop to stop at,
and subsequently take the MTR to the station nearest the hotel.

At 11pm, the Airport Express will be the fastest and most comfortable ride which stops at your station.
Bus 22 will be cheaper but will take longer.
