Its Extra Virgian Olive Oil, and a simple mixture of herbs and salt that is added ontop the loaf of bread aso it comes out of the oven to add a little flavor. If you are looking for something to do at home I usually take some EVOO, and chop up fresh garlic, add some balsamic vinigar, and use it as a simple yet elegant dip for my crusty bread

Probably extra virgin olive oil, but there are bottles with rosemary in it, garlic, or other flavors.
