Locally, Sainsbury, Morrissons, Tesco and Asda have stopped selling tins of creamed sweetcorn. I have some recipies that call for it, but putting regular sweetcorn in does not work the same. Nor does putting it in a blender first.
So does anyone have a recipe for "creamed Sweetcorn" please?

Fresh Creamed Corn

This is especially good made with fresh white corn. You can use leftover grilled corn for this recipe.

Ingredients:

4 cups fresh corn (white or yellow)
1/3 cup (6 tablespoons) unsalted butter (margarine can be substituted)
1 5-ounce can whole or low-fat evaporated milk, or 5 ounces light cream
5 ounces chicken or vegetable stock
1 heaping tablespoon cornstarch
1 heaping teaspoon sugar
1 teaspoon pure vanilla extract
salt and pepper to taste

Preparation:

Cut kernels from ears, removing all corn silk.

Place butter in a large frying pan or 4-quart pan over medium heat. When butter is melted, add corn and stir to combine. Add evaporated milk (or cream), stock, cornstarch and sugar. Cook, stirring constantly until the mixture thickens (5 to 6 minutes). Add vanilla, salt and pepper to taste and serve garnished with parsley, chopped chives, fresh herbs or tomato chunks.

CREAMED CORN

CREAMED CORN - EASY SOUTHERN STYLE

6 medium ears fresh corn (can also use canned or frozen corn)
½ c. butter
¼ c water
1 tsp. sugar
½ c. half & half
2 tsp. cornstarch
salt & pepper to taste

Cut corn from cob (about halfway down the kernel), then scrape well. (You could do this the day before and store covered in the fridge.) Place butter in micro-proof casserole dish and microwave until melted. Stir in corn, water and sugar. Cover tightly with plastic and micro HI 3 min. In the meantime, put the cornstarch into the half & half so it will begin dissolving, stir frequently. Stir the corn and give dish ½ turn. Cover again and micro HI 5-7 min. Then stir the half & half mixture into the corn, cover and micro HI 2-3 minutes. Stir well, adding salt & pepper to taste.
This recipe is about 6 servings. If increasing amounts/servings, increase cooking time accordingly. I like combining yellow and white corn for this. Everyone loves this dish.

Check your freezer section of your grocery store - they sell frozen creamed corn at the stores I shop at.
