Personally - Sandwich after sandwich until it's gone. But Nachos are also good or even Turkey enchiladas.

crumble it and put in a dip,make a salad, you ban make soup, make some turkey rolls or make some johnny cake and turkey or turkey dumplin or season rice and turkey or chips and turkey or sandwich. I'm from the caribbean so I have a lot more ideas of what you can do with a turkey.

The day after I made soup with the bones and some meat, then froze the rest of the meat until I feel like eating turkey again.

We eat it, every day for 6 or 7 days after Thanksgiving or CHristmas, JUST like we did for the first night's dinner. I save some of the fat from roasting to make fresh gravy every night. We make sure there is PLENTY of stuffing, so we don't run out of that before the turkey.

I usually make Turkey Toquito's, with my left over Turkey... But, this year I made a caserole out of it, with bisquits, on top... My kids seemed to enjoy that dish.. but,, my turkey toquito's, I get quite a few compliments on them... I simply get corn tortilla's, and some monterey Jack cheese, heat up the corn torts for 1 minute, to soften them, before rolling them... stuff them with turkey and monterey jack cheese, and roll them , with a toothpick, for a guarantee to keep them together, place them in Olive Oil, and make my homemade Quacamole... with avocado's lemon, lime , sour cream ( a tad), and garlic, salt (to taste), mix with the blender and top with lime, to keep it from going brown, and serve with the toquito's once there done, and make some spanish rice & beans with a shred of sharp cheddar on top of the beans, and its a really simple dinner, and everyone in my family including my mom, (who's a very picky eater) seems to just love this meal !!! Me too!!! Smile!!
