My own version...
BURRITO:
1 1/2 lbs. Italian sausage, cooked
1 onion, chopped, cooked
1 small can chopped green chilies (optional)
1 package frozen create-a-meal vegetable mix (broccoli, snap peas, water chestnuts, red pepper strips)
1 package chili seasoning mix
3/4 cup water
1 (8 oz.) package shredded cheese (Mexican)
8-10 large flour tortillas
sour cream
In large skillet, cook sausage and onion thoroughly; drain off grease. Set aside in bowl.
In same skilled saute chilies and frozen vegetables until tender; re-add sausage mixture, chili seasoning and water. Mix until blended and heat until bubbly.
Place a small amount of cheese on the lower center portion of the tortilla (see directions on package how to wrap) followed by 1/2 cup sausage mixture. Fold bottom up, side inwards, rolling up to top. Place the seam downwards on cookie sheet. Same procedure with remaining tortillas. Bake at 350 degrees for 30 minutes. Serve with sour cream.

Burritos can be made of many different items, most common are beans cheese and ground beef but you can use any variety of foods and have a good combination. Burritos are folded and rolled, using a medium to large flour tortilla. You put filling to one side take the edges and turn them in about a quarter inch then take the top and roll the filling up into the rest of the flour burrito and place it on the plate seam down. Then you can cover with whatever toppings you like, or if you'd like a chimichanga you would fasten the seam on the bottom with a toothpick and fry it until the outside is a light tan.

Breakfast Burrito:

1 Burrito
butter-flavored cooking spray
2 tablespoons chopped onions
1/2 tablespoon chopped canned green chilies, drained
1/3 cup egg substitute
1 tablespoon shredded fat-free monterey jack cheese
1 dash pepper
1 dash liquid hot pepper sauce (optional)
1 10-inch 98% fat-free flour tortilla, warmed
1. Lightly coat a nonstick skillet with cooking spray.
2. Cook the onion and chilies in the skillet over medium heat for 3 minutes, stirring constantly.
3. In a small bowl, whisk together egg substitute, cheese, pepper, and Tabasco (if using).
4. Pour into skillet and scramble for 3 to 4 minutes, until the eggs are done to taste, but not dry.
5. Place the egg mixture along one-third of the tortilla, about 2 inches away from the bottom.
6. Fold up the lower edge, and then roll from the side to form a burrito.
7. Eat immediately or wrap in a napkin or aluminum foil to eat out of hand while waiting for the school bus or commuting to work.

This is a wonderful recipe and wonderfully easy to make. I have it for breakfast almost every morning.

7 min prep
INGREDIENTS
3 extra large grade aa eggs
4 ounces cut-leaf spinach, drained
1 large tortilla
2 slices kraft individually wrapped cheddar cheese
DIRECTIONS
In a large bowl, beat eggs well.
Boil spinach and drain.
In a 10-inch skillet, scramble eggs and spinach together.
Cut 1 cheese slice in half and place end to end across the center of the tortilla.
Place eggs on top of cheese.
Cut the other cheese slice in half and lay end to end across the top of the eggs.
Microwave for 30 seconds to melt cheese and soften tortilla.
Roll the tortilla into a burrito, and enjoy!

BURRITO on the Run
INGREDIENTS
1 to 1 1/2 lb. hamburger
1/2 C diced onions*
1 - 16 oz. can refried beans (Taco Bell is the best!)
2 t chili powder
1/2 t ground cumin
1 - 10 oz. can of Rotel tomatoes with chilies
3/4 C shredded Monterey Jack or cheddar cheese, (3 oz.)
sour cream*
3/4 C salsa*
Six burrito (10") flour tortillas
*OPTIONAL
ITEMS NEEDED:
teflon sauce pan
can opener
stirring utensil
1/2 t, 1 t measuring spoon

1.FRY hamburger and onions in sauce pan over medium heat. Drain fat.
2.ADD refried beans, spices and Rotel tomatoes with chiles. Mix well.
3.PLACE shreddede cheese and about 1/3 cup of the filling in the center a burrito sized flour tortilla One may choose to melt the cheese in the shell or later sprinkle cheese on top of shell. Then, fold shell.
4.FOLDING TORTILLA ENVELOP STYLE:
Folding a burrito is like creating an envelope. To fill and fold a burrito, place about 1/3 cup of filling in the center of a flour tortilla. Fold the bottom third of the tortilla up over the filing. Take the left side of the tortilla (the part that has no filling on it) and fold it over the filling. Repeat with the right side of the tortilla, then roll it up to enclose the filling in a neat, easy-to-eat packet.
5.SERVE: Top with sour cream, guacamole, salsa and/or hot sauce. Also, one can garnishes with lettuce, onions, green onions, jalapenos, tomato, black olives and/or cilantro Great to "cover" with enchilada sauce and cheese!
MENU IDEAS : Serve burrito with a side of refried beans, black or whole Pinto beans; Spanish or brown rice; grilled mixed vegetables; Mexican lettuce salad and/or a Mexican dessert.
6.SUBSTITUTE OR TRY ADDING = Other spices:1/2 t, ground red (cayenne) pepper, 1/2 t black pepper, 1/8 t ground oregano, 1 t dried minced garlic or cilantro. Or, try adding some salsa to meat mixture.

Pretty much anything wrapped in a flour tortilla can be a burrito, but here's what I do - and it's the HEALTHY version:
Cook 1lb of ground turkey.
Once browned, add taco seasoning to the meat for flavor.
Mix 1/2 cup of salsa and a can of fat-free refried beans into meat.
Add 1/4 cup fat free cheddar cheese to meat mixture. Melt and stir.
Warm flour tortillas. (Easy: 12 sec each in the microwave).
Top tortilla with meat mixture, chopped lettuce, diced tomatoes, fat free sour cream, chopped onions, a couple of sliced black olives, diced green chiles, fat free cheddar cheese, and a couple of jalapeno pepper slices.
Roll and enjoy!
