Clarissa, first thing is, it sounds like you're talking about one guy, so don't group all of us into the same category, because I've been through the same thing with women.
This guy obviously doesn't want to be anymore than friends, and from his perspective, he doesn't understand why you don't get the point. Or maybe he doesn't know that you like him? Have you told him straight out? Take it from me, us guys can be pretty oblivious to signals that girls seem to think are obvious.
Sit him down and hit him point blank with it, and ask him if there can ever be anything more, or if you'll never be anymore than good friends (if you're alright with that). If he tries to change the subject, don't let him, tell him you want an answer. He'll eventually say what he thinks, and then you'll know.

Ah, Clarissa. It's not always going to be that way. Let me tell you something. Stop giving your feelings away so easily. Hold them to you like the precious commodity that they are. Let a man really earn them and even then he doesn't need to know all about them. Keep some things to yourself. Even after you're close you never ever need to tell him every single thing you're feeling. Keep some parts of yourself that are just for you. That way you'll never lose yourself or give away too much of yourself in a relationship. Keep your hobbies, keep your friends and never stop looking out for your well-being first. Sounds like you have strong feelings for a holes
If you have strong feelings for a decent man he will at least have the decency to be flattered but tell you sorry no more than friends.
You could also be headfucked and not register that he's actually said this so now he's just rtying to piss you off to get riud of you 'cause he's triied everything else.
