chinese vegetable fried rice
* 1/2 tablespoon sesame oil
* 1 onion
* 2 tablespoons soy sauce
* 2 large carrots, diced
* 2 stalks celery, chopped
* 1 large red bell pepper, diced
* 3/4 cup fresh pea pods, halved
* 1/2 large green bell pepper, diced
* 6 cups cooked white rice
* 2 eggs
* 1/3 cup soy sauce
DIRECTIONS
1. Heat oil in a large skillet over medium heat. Add onion and saute until soft, add 2 tablespoons soy sauce and stir-fry for 5 to 6 minutes.
2. Stir in carrots, celery, red bell pepper, pea pods and green bell pepper and stir-fry another 5 minutes. Then add rice and stir thoroughly.
3. Finally, stir in scrambled eggs and 1/3 cup soy sauce, heat through and serve hot.

It's easy. First cook off some white rice and let it cool, preferably overnight. Have all your vegetables precooked and ready to go. Start with a hot pan with vegetable oil in it with a small piece of fresh ginger, discarded after it turns light brown. Add rice and saute over high heat till its becomes lightly toasted. Add vegetables from longest reheat to shortest stirring constantly. Add soy sauce (Tamara) and a little amount of sesame oil (very strong) stirring constantly.Soy sauce can be cut with water also to keep the strong taste out. One big secret that brings this whole dish together: After your oil is hot, ginger discarded, add 1 onion peeled and cut on the bias and saute till onions are caramelized and then add rice and so on. The biggest plus in the world. If you want eggs in your rice, this is the perfect Asian egg recipe. Be careful because it is hot. In a Teflon pan, put on high heat and add about 2 teaspoons sesame oil with 1 teaspoon regular oil (not olive) and heat just below smoking point. Add scrambled eggs and cook like a omelet, flip ,remove and chop and add to rice. The egg will poof right up a cook very fast. Bon appetite

Fried Rice Recipe
2 tablespoons vegetable oil
2 cups assorted cooked vegetables (such as any vegetable leftovers)
2 eggs, beaten
2 tablespoons soy sauce
1 teaspoon sesame oil
2 cups cooked rice
Salt and pepper
1/2 cup coarsely chopped nuts (such as cashews or peanuts)
2 tablespoons chopped green onion
In a large skillet or wok heat oil over medium-high heat, add vegetables and cook until just tender. Push vegetables to sides of pan and pour eggs in middle. Scramble eggs, and when they begin to solidify, add soy sauce, sesame oil, and rice. Toss to combine ingredients and heat to cook rice through. Taste and adjust seasoning with salt and pepper, if needed. Serve immediately, garnished with nuts and green onions.

Ok so without the meat. Sautay sp sorry your veggies in a well oiled frying pan get them all semi browned add your eggs and scramble the bunch but make sure the eggs are finely scrambled and broke up in smaller pieces then add your rice semi cooked already then mix the bunch up heat and enjoy add a little sweet and sour or soy sauce or terryaki your choice.

Cold cooked rice.
Fry your chosen veg,I will always use onions/spring onions in mine add soya sauce [ not to much]
Add beaten egg & then your rice cook until rice is well heated.
You can add a little sesame oil towards the end of cooking.

Egg Fried Rice
2 Teaspoons dark sesame oil
2 eggs
2 egg whites
1 Tablespoon vegetable oil
4 Cups cold cooked rice
1 Cup frozen green peas -- thawed
1/4 Teaspoon salt
1/4 Teaspoon pepper
1 Cup bean sprouts
1/3 Cup chopped green onions
1. Combine the sesame oil, eggs, and egg whites in a small bowl; stir well, and set aside.
2. Heat vegetable oil in a large nonstick skillet or wok over medium-high heat. Add egg mixture, and stir-fry 2 minutes. Add rice; stir-fry 3 minutes. Add green peas, salt, and pepper; stir fry 5 minutes. Add bean sprouts and green onions; stir-fry 2 minutes. Serve immediately.
