Personally I really love cold sliced turkey with hot fresh chips (I mean real potaotes not the frozen kind) and salad. I have this EVERY Boxing day.

Turkey Frittata
1/2 cup onion, sliced
1 clove garlic, minced
1 tablespoon oil
1 cup mushrooms, sliced
1 cup frozen, spinach, chopped, defrosted and squeezed dry
2 tablespoons lemon juice
1/8 teaspoon black pepper
1 cup turkey, cooked and chopped
6 eggs, beaten
In a large skillet sauté the onion, garlic, and mushrooms in oil for about 5 minutes. Add the spinach, lemon juice, and pepper. Cook over low heat for 3 minutes. Add the turkey and eggs. Mix well. Pour into a greased 9-inch round baking pan. Bake at 350-degrees for 25 to 30 minutes or until the edges are set. Cut into wedges and serve.

Just substitute turkey for anything that you would use chicken for. Tamales, Enchiladas, Soup, Quesadillas, Soft Tacos, Turkey Wrap, Turkey Sloppy Joes, Turkey Sandwitch are all some examples of what you can do w/ leftover turkey.

Here's my recipe for leftover roasted chicken but should work with turkey too: Shred turkey to medium sized slivers, add seeded tomatoes cut in wedges, add chives or the greenest part of spring onion leaves, olive oil, salt and balsamic vinegare, and you've got a delicious turkey salad.

Turkey sandwich with miracle whip, stuffing, and cranberry sauce. I didn't get turkey this year so I miss that.
Try just cutting some into cubes, add some veggies and cream of mushroom or celery (basically cream of whatever you like) soup. Let it cook until the veggies are done and pour over noodles. Nice, light and good.

Fry some onion, add turkey cut up into bite size bits, mix in some mushroom soup and herbs. Put into a pie dish and cover with pastry or mashed potatoes, bake in hot oven until golden brown. You can also use as filling for double crust pie.

You can make turkey croquettes. Boil a few potatoes, Once they are soft put them in a bowl, add the turkey very finley chopped,salt,pepper, garlic finely chopped, parsley finely chopped, one egg beaten and some breadcrumbs. Mix everything together and make them into croquettes if the mixture is sticky add some more breadcrumbs or if it is too dry add another egg. when made into croquettes coat them with breadcrumbs. Now they are ready for frying. Serve them with chips and salad.

Cut some turkey up into smallish pieces, chop some spring onions into it, a dolop of mayonnaise and eat with nice crusty bread. I am making a stirfry with my left overs ... peppers, chilli, mushrooms and serving with a garlic bread!
