Depends on what curry spices you have. Cumin and curry powder in a frying pan, lots of oil, heat gently until the powder sizzles. Add lots of finely chopped onions and garlic, fry until they soften. Add shredded turkey and cook thoroughly. Now depends what liquids you have, stock cube in water is fine, or mix up some tomato puree with water and add to the pan. Let is come to gentle bubble and then stick in the oven, low heat, just bubbling. The longer the better.
This is a basic recipe, obviously the more spices you have, the more you can add. If you have coconut cream then put this in. There are so many variations on curry but this is a good basic one with cupboard ingredients that you are likely to have. Good luck,

East is East, and West is West and never the twain shall meet, but I have done my best to cross the divide. I not only made a good turkey curry just by throwing in left overs and plenty of curry powder and giving it half an hour on a hot stove, but I invented Christmas Pudding Curry and the highlight of my cookery whizz kid stuff is Black Pudding Curry, Don't knock it until you have tried it. East meets West in Warsop.................

Try buying a ready made sauce by Colmans and cut the turkey into bits ,throw it in a pan and Hey Presto

The easiest way is to buy a jar of your favourite ready made curry sauce, and to simmer your cooked turkey in that for a few minutes, then serve with rice and mango chutney. Works for me!

Sliced Onions
Potatoes (quartered)
Carrots (wedges)
Ready made curry powder
Salt
Oil
Cream
Fry onion in oil till soft. add in curry powder , and fry till fragrant. add in water . Throw in Carrots and potatoes and let curry boil for about 10min. Salt . Add in turkey and cook for another 5-8min. Lastly, cream to make the curry a llitte thicker and tastier.
