I have a relative that is sensitive to cinnamon, but likes pumpkin pie, I am looking for alternative receipes.

Is your relative allergic to cloves, ginger, allspice or nutmeg?

Take your favorite pumpkin pie recipe. Add together the amount of the above spices and cinnamon. Replace with a mix of the above spices in the ratio of three parts ground nutmeg, three parts ground allspice, two parts ground ginger, and 1/2 part ground cloves.. This is also good for apple pie.

Say, 3/4 teaspoon nutmeg, 3/4 teaspoon allspice, 1/2 teaspoon ginger and 1/8 teaspoon cloves. That would give you just over 2 teaspoons spices. My recipe for pumpkin pie takes two teaspoons of spices. This mix would be an acceptable amount to substitute.

Or balance the above spices to your taste. Maybe you like more cloves and ginger and less allspice. That's fine. Just replace approximately the same amount of cinnamon with spice with the cinnamon-less spice mix.

You can grind up a bay leaf and use that as a substitute for cinnamon (it's often available under the name Cassia)
You can try allrecipes.com. They allow you to do a recipe search and eliminate the ingredients you don't want.

Take any recipe and delete the cinnamon.
Simple.
