My chocolate chip cookies are always flat and crunchy but
I want them to be chewy and with a little height -maybe 1/2 inch. Does anyone have any tips or recipes? Thank you.

I agree Nestle Toll house all the way! And this year I discovered my best friend: If you want your cookies to have a little bit of height use a little cookie scooper.. kind of like an ice cream scooper, but only a tablespoon. Your cookies will be uniform, have more height, and it is SO much easier! I have never made cookies faster.. you have to get one of these things! I got mine from target for $2, but I am sure you can get them anywhere. It will also make your cookies chewier.. (not to mention the fact that you must make sure you have very fresh brown sugar.. if it isn't soft your cookies won't be either!!) Also, you shouldn't trust the temperature dial on your oven.. invest in a cheap little oven thermometer... My baking has really improved because of that too.

I am a professional cook, and I have to say that I love the Nestle Tollhouse recipe. My secret to getting perfectly round, chewy cookies is to roll about 2 tablespoons of cookie dough in the palms of your hands until they create a sphere. Then, crack the ball in half, and stick the two halves together with the cracks facing up. Place them on the cookie sheet (I actually use a silicon baking pad, or cut up a brown paper bag and use that on top of the cookie sheet) crack side up, and they will spread perfectly.

Another important thing is to know your oven well. If it's a little wonky or you don't totally trust it, then maybe bake at 325F instead of 350F, as it's a bit more forgiving. You might also be overbaking a bit.

And lastly, make sure that your butter isn't overly soft or melted, because if it is, the cookies will spread too much and be thin. If you need to, stick the cookie dough in the fridge after you form the balls to firm it up a bit.

Let me tell you that if follow the recipe you have, or the tollhouse one, and add instant pudding mix to it, you will have cookies that are so soft! Just add (2) 3.4oz boxes of vanilla mix. If you like banana try that too, its great! They turn out a nice size, never flat and so soft you can leave them on the counter open and they wont get hard. Best of luck!

buy the little square chocolate chip cookie dough packages and they always turn out good and their is no work to be done, just pull apart the dough squares, put them on the pan and put them in the oven and they turn out perfect.

make the dough balls bigger and dont smush them down before you bake. take them out when they still look a little under cooked,they will finish cooking and remain chewy and moist,oh, and place on a rack to cool.

make them in to 1 inch balls and don't smush them down they only take 10 mins to bake the longer you bake them the more hard they will get
