My favorite thing for breakfast is biscuits & gravy, but for 20 people; I'd go with some kind of breakfast casserole. Here's a recipe for one that I have:

Breakfast Casserole

1 can crescent rolls (8)
2 c. grated colby cheese
6 eggs
1/2 c. milk
1 lb. sausage (We like the "hot" sausage.)

Fry sausage and drain. Place crescent rolls in 13" x 9" baking dish and press flat, press seams together. Crumble sausage over rolls. Spread cheese. Mix eggs & milk together with salt & pepper to taste. Pour over sausage and cheese. Bake 350 - 375 for 30 - 45 minutes. Start checking at 30 minutes.

I'm not sure how much the recipe actually makes, but I would think one 13 x 9 baking dish would be enough for 20 people. Especially if you were going to have other things as well, such as danishes, muffins or bagels. If not, you might want to make a second dish of casserole.

Good luck!

How about breakfast burritos.

You take and brown sausage drain.
Scramble Eggs.
Shreaded Cheese

Then serve on warm flour tortillia with salsa. This is a favorite of my families. They all requested it on Christmas morning. Its quick and easy for a large bunch.

One recipe that I found today that might also work is the following:

Ingredients:
24 bananas
6 lbs. fresh whole strawberries (6 quarts)
6 lbs. vanilla yogurt (3 quarts)
7 ozs. toasted chopped almonds (1 1/2 cups)

Instructions:
For individual servings; peel and split 1 banana. Place banana halves in serving bowl. Top with 4 ozs. (1 cup) fresh strawberries, 4 ozs. (1/2 cup) yogurt, and 1 Tbsp chopped, toasted almonds.

Amish Breakfast Casserole

"We enjoyed a hearty breakfast bake during a visit to an Amish inn," recalls Beth Notaro of Kokomo, Indiana. "When I asked for the recipe, one of the ladies told me the ingredients right off the top of her head. I modified it to create this version my family loves. Try breakfast sausage in place of bacon."

INGREDIENTS

1 pound sliced bacon, diced
1 medium sweet onion, chopped
6 eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups (8 ounces) shredded cheddar cheese
1-1/2 cups (12 ounces) small-curd cottage cheese
1-1/4 cups shredded Swiss cheese

I made breakfast for 25 before. I made three breakfast casseroles the day before and refrigerated them overnight before baking. One with ham, another with sausage, and one with potatoes. You can go to All.Recipes.com for these. I also served a large fruit bowl and biscuits & bagels with butter, jam, and honey. Also, there was an assortment of muffins. For drinks, hot tea and coffee, orange juice. Milk if there are little ones.

Here's a really easy omlet idea. Set out all the ingrediants for omlets ( eggs, onions, ham, green peppers, cheese, sausage, .....anything you like)
Give each person a large zip-lock baggie and have them add 2-3 eggs and whatever ingrediants they want. Get all the air out of the baggies and zip them.
Shake them to mix the ingrediants well. Roll each baggie up and secure with tape.
Boil about 6 at one time in a large pot for about 10 minutes.
Open baggies and enjoy.
Each person has their own creation and had fun making it.

I would set out a little (big in your case) buffet. You could set out scrambled eggs, fried potatoes, toast, bacon or sausage (or both), and some pancakes. Sometimes my parents make salmon capor bagels. I don't like them but a lot of people do. Or you could set out a breakfast sandwich buffet. Good luck! Happy New Year!!!!

orange juice, milk coffe, toasts with cheese, cookies with mermelade (easy not have to cook). Try not to spend too much time cooking, just think about "prapaired staff" that you can buy in the supermarket: fruits, milk orange juice, cookies, etc, etc.
You americans eat too much fat during your breakfast (bacon and fried things, puagh! sorry but I do not like those) that is not healthy and not necesary for your body.
