Molten Chocolate Cake
Ingredients:
Ganache Filling:
1/3 cup heavy cream
2 1/2 teaspoons light corn syrup
1/2 cup semi-sweet chocolate, chopped finely
Cake Batter:
2/3 cup butter, softened
1/3 cup semi-sweet chocolate, melted
2 tablespoons unsweetened chocolate, melted
3 eggs
2 egg yolks
1/2 cup all-purpose flour
2/3 cup confectioners ’ sugar
Preparation:
Preheat the oven to 375ºF.
Bring the cream and the corn syrup to a simmer and pour over the chopped chocolate. Let sit for 5 minutes and mix until smooth. Place in the freezer until just firm enough to scoop, about 20 minutes. Stir the ganache occasionally while it is in the freezer.
While the ganache is cooling, whisk the butter and the two chocolates together and add to the eggs.
Sift the flour and sugar together and fold into the chocolate mixture.
Butter and flour eight 4-fluid-ounce ramekins. Fill the ramekins with 3 tablespoons batter and make a small well in the center by pushing the batter up slightly on the sides. However, the bottom of the ramekin should not be visible.
Scoop 1 tablespoon of the ganache and place it in the center of each ramekin.
Spoon another 2 tablespoons of cake batter on top of the ganache, making sure to seal it between the two layers of batter. The batter should come up to 1/4 inch from the top of the ramekin.
Bake the cakes in a 375°F oven for 15 to 20 minutes or until the top of the cake springs back lightly to the touch.
Loosen the edges of the cakes before unmolding, and place on a small dessert plate.

It says its a pie but its more like a cake.
Peaches & Cream Pie
1 1/2 C. flour
1/2 C. powder sugar
3/4 C. oleo
** Mix and pat in oblong cake pan. Bake 325 degrees at twelve minutes & let cool.
8 oz. cream cheese
1tsp. vanilla
1/2 C. sugar
1/4 tsp. lemon juice
** Beat together and spread on cooled crust. Refrigerate while making the topping.
1 1/2 C. sugar
1 1/2 C. water
4 tbsp. cornstarch
**Cook this until it is thick.
Add 1 box peach jello to the above mixture. Cool and stir in 4 to 5 C. sliced peaches (fresh is better but frozen will work). Chill and serve with whipped topping.

Brown Sugar Chocolate Cake
This brown sugar cake is made with a chocolate icing.
INGREDIENTS:
10 ounces semisweet chocolate, separated
2 cups cake flour
1 teaspoon baking soda
1/4 teaspoon salt, divided
8 ounces unsalted butter at room temperature
1 pound dark brown sugar
3 large eggs
1 1/2 teaspoons vanilla extract, divided
1 cup cold water
1 cup sour cream
PREPARATION:
In the top of a small double boiler over low heat, melt four ounces of the chocolate; set aside to cool.
Sift the flour with the baking soda and half of the salt (1/8 teaspoon) then set aside. In a large mixing bowl with an electric mixer, cream the butter with the brown sugar until light and fluffy.
Add the eggs, one at a time, scraping the bowl frequently. Beat in the melted chocolate. Mix one teaspoon of the vanilla with the cold water, and add the sifted dry ingredients alternately to the batter with the water, beginning and ending with the dry ingredients. Beat only long enough to make the batter smooth.
Turn the batter into a greased and floured 10-inch tube pan with a removable bottom. Bake at 350° for one hour. A toothpick stuck into the center of the cake should come out with just a few crumbs clinging to it. Cool the cake on a wire rack for 15 minutes. Cake might fall slightly while cooling. Loosen the edges and invert onto another rack to cool completely.
To make the icing, melt the remaining chocolate in the top of a double boiler over moderate heat. When completely melted, whisk in the remaining salt, remaining 1/2 teaspoon vanilla, and the sour cream. Whisk until the icing is smooth and fluffy. Immediately pour the icing over the top of the cooled cake, letting it drip down the sides.

ingredients..
1 3/4 cups unsifted flour
2 cups sugar
3/4 cup Cocoa powder
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 eggs
1 cup strong black coffee (or 2 tsp. instant coffee plus 1 cup boiling water)
1 cup buttermilk or sour milk
1/2 cup vegetable oil
1 tsp. vanilla
Directions..........
Combine flour, sugar, cocoa, baking powder and soda, and salt in a large mixer bowl. Add eggs, coffee, milk, oil and vanilla. Beat at medium speed for 2 minutes (batter will be thin). Pour batter into 13x9x2-inch pan or two 9-inch layer pans. Bake at 350 degrees for 35 to 40 minutes for layer pans or until a toothpick or fork inserted in center comes out with a few crumbs attached. Let the cake set until completely cool. Then frost!!!

CARROT CAKE:
2 cups sugar
1 1/2 cups Crisco oil
4 eggs
2 1/4 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
3 cups grated raw carrots
1 1/2 cups chopped walnuts
Mix in large bowl, sugar, oil and eggs; beat well. In separate bowl, sift flour, salt, baking soda and cinnamon. Blend dry ingredients into egg mixture. Stir in carrots and nuts. Pour into prepared pans. Bake at 300 degrees for about 60 minutes or until toothpick inserted in center comes out clean. Cool well before icing.
CREAM CHEESE FROSTING:
1 (8 ounces) package cream cheese, softened
1/2 cup margarine or butter, softened
1 teaspoon vanilla extract
3 cups sifted powdered sugar
1 Tablespoon milk
Cream all ingredients together until spreading consistency.

I have this old recipe passed down to my mother for RED VELVET CAKE; It so SWEEET, and so GOOD.Me and my family can eat it in less then week. It so IRRESISTIBLE! I can eat it for breakfast, dinner, and dessert.
Red Velvet Cake
1 1/2 cup Crisco oil
1 3/4 cup sugar
2 egg
2 1/2 cup flour
1 teaspoon salt
1 cup buttermilk
2 teaspoon cocoa
1 oz. Red Food Coloring
1 teaspoon baking soda
1 tablespoon vinegar
1 1/2 vanilla extract
Beat Crisco, sugar,and egg. Sift the flour and salt 3 times. add to mixture. Mix together cocoa and red food coloring and stir it in the mixture. Add baking soda and vinegar in cup first, then add to the mixture and beat. Add vanilla extract. Set the oven to 350 degrees and Bake for 35 minutes. Make Icing ( Below)
Icing:
1 stick Margarine or butter
1 box of confectioner sugar
1 8 oz. cream cheese
1 1/2 teaspoon vanilla extract
1 cup pecans
Mix cream cheese, margarine, while adding confectioners sugar.Spread in between each layer and on the outside of the cake. Put a little bit of pecans on each layer and on the outside of the cake.

Directions
Mix and pour batter into a 9x13-inch pan. Bake at 350 for 50 to 55 minutes. Let cool then frost.

try a Mandarin orange cake (aka Pig Pickin Cake)
1 yellow cake mix
11-ounce can mandarin oranges with juice
4 eggs
1/2 cup vegetable oil
9-ounce carton frozen whipped topping, thawed
8-ounce can crushed pineapple, with juice
3.4-ounce box instant vanilla pudding
Preheat oven to 350 degrees. Grease and flour three 9-inch cake pans. In mixing bowl, combine cake mix, mandarin oranges, mandarin orange juice, eggs and oil. Beat for 2 minutes with electric mixer. Pour into pans and bake for 20 to 25 minutes or until cake tester comes out clean. Cool in pans for 5 minutes, turn out of pans and finish cooling on wire racks.
In a mixing bowl, combine whipped topping, pineapple, juice from can and vanilla pudding mix.
Frost between layers and on top of cake.

so good and so easy...
it's called dump cake
1 can of cherry pie filling
1 can of yellow cake mix
pads of butter
dump the cherry pie filling in to 9x13 pan then sprinkle the cake mixture on top spread pads of butter all over so when it melts it creates a crust over the top it's so good, you can use any pie filling too, but the cherry is super good. I've gotten lots of raves on this one.
