Turkey Hash

Serves 4

Preparation :15 Cook :25 Stand :00 Total :40

Ingredients:

3 russet potatoes, washed and diced 1/4"
4 slices bacon
8 ounces cooked turkey
3 tablespoons red onions, diced 1/4"
2 tablespoons red pepper, diced 1/8"
Salt, to taste
Peppercorns, freshly cracked
Paprika

Cook the bacon in a large skillet until very crispy. Remove the bacon and drain it on a paper towel. Once cool, chop the bacon into small pieces. Reserve.

Add the potatoes to the pan and cook for 10-15 minutes until they begin to brown and get crispy. Push the potatoes to one side of the pan and add your onions and peppers. Cook for 3-4 minutes and add the turkey. Cook for one to two more minutes and stir all together. Season the hash with salt and cracked pepper. Color with the paprika. Add the chopped bacon pieces. Stir again.

Place a generous pile of the hash in the center of four warm plates and top each pile with 2 eggs over-easy.

Rosemary Turkey Salad

Ingredients

(2 servings)

1/4 c Mayonnaise
1/4 c Chopped Fresh Parsley
1 tbsp. Fresh Rosemary Leaves
1/8 tsp. White Pepper
1 1/2 c Cooked Turkey
1 lg. Granny Smith Apple or Red Bartlett Pear, Cored And Shredded
2 lg. Leaf Lettuce Leaves
1 c Alfalfa Sprouts


Instructions

Combine Mayonnaise, Parsley, Rosemary & Pepper. Add Turkey & Apple. Toss Gently. Cover & Chill Until Ready To Serve. Place Lettuce Leaves On Individual Serving Plates. Top Each with 1/2 C. Alfalfa Sprouts. Spoon Half Of Turkey Mixture onto Each Plate & Serve Immediately.


Turkey Curry

Ingredients

(4 servings)

1 tbsp. Canola Oil
2 tbsp. Onion, chopped
1/4 c Chicken broth
3/4 c Sour cream
2 tbsp. Curry powder
1 tsp. Cayenne pepper
1/2 tsp. Cumin
1/2 tsp. Ginger
1/2 tsp. Ground turmeric
1/2 tsp. White pepper
1/2 tsp. Parsley
1/2 tsp. Ground coriander
1 lb. boneless cooked turkey, Sliced
2 c Steamed rice


Instructions

Heat oil in a medium skillet. Add the onions and cook over medium heat until softened, but not browned. Drain fat from skillet and add remaining ingredients, except turkey and rice. Mix well, bring to JUST a boil, add the turkey and simmer for 4-5 minutes to heat through. Place turkey over rice and pour sauce over turkey. Serves 4.


Turkey Vegetable Stir-Fry in the Microwave!

Ingredients

(4 servings)

1 tbsp. Cornstarch
2 tbsp. Soy Sauce
1/4 tsp. Ground Ginger
1 (10 1/2 Oz.) Can Chicken Broth
1 Carrot Cut Into Julienne Strips,
2 tbsp. Vegetable Oil
2 c Sliced Mushrooms
4 Green Onions Minced
1 Stalk Celery, Diagonally Sliced
1 (6 Oz.) Pkg. Snow Peas, thawed
2 c Coarsely Chopped Cooked Turkey Breast
2 c Brown Rice Cooked
2 tbsp. Silvered Almonds Toasted


Instructions

Combine cornstarch, ginger, chicken broth & soy sauce in a 2 Cup glass measure. Stir well. Microwave uncovered at high 2 To 3 min., or until thickened, stirring every 30 seconds. Set aside.

Combine carrot & oil in a 2 1/2 quart Casserole. Cover with plastic wrap; Microwave at high 1 To 2 min. or until carrot is Crisp-Tender. Stir after 1 min. Add mushrooms, onions & celery. Microwave uncovered at high for 1 To 2 min.; Stir well. Add soy sauce mixture, snow peas & turkey; Stir well. Microwave at high 2 to 3 min ; Stir.after 30 seconds.

Serve over rice. Garnish with almonds.

Take a large square of aluminum foil and place either a boneless chicken breast or a boneless pork chop in the center. Season it with one of the following: barbecue sauce, teryaki sauce, lemon pepper, or whatever you're hungry for.

Place any or all of the following around the meat: a quartered and peeled potato, a few broccoli spears, a small peeled and quartered onion, a peeled and sliced carrot, and a few mushrooms. Dot the veggies with margarine and season with salt and pepper.

Fold the foil up to form a tightly sealed package, and bake at 350 degrees until the meat is done and the veggies are cooked. (Usually half an hour to 40 minutes.)

This is easy, delicious, and clean-up is minimal!

Stop chomping on animal carcass and try a nice hearty vegetarian meal. Some of the Indian foods like curried vegetables and lentils are a real treat loaded with great spices. Also try the website below for some more ideas. None of the recipes on the website involve eating deceased animal bodies and most are easy to make.

You could try having breakfast for dinner; it's really easy, make pancakes, bacon, eggs, etc. It's easy and delicious. Also, you can try a Mexican layered casserole, use flour tortillas, cheese sauce, and salsa to layer up a casserole, I just had it tonight, and it only took fifteen minutes. Of course I don't know the exact recipe, because we brought it from the store. The only thing you add is ground beef. It really tasty, and it taste homemade, Trust me It's good.I think the brand is " Taco Bell"

Take a couple of chicken breasts and cut them into bite size pieces. Mix a jar of apricot preserves, russian or california french salad dressing and an envelope of dry onion soup mix. Brown your piences of chicken then pout the mixture over the chicken and let simmer on the stove for a little while. You can also pour the mix over full chicken breasts in a casserole dish and bake- 350 for 30 minutes.

Another easy recipe:
Mix 2 cans of tyson chicken, 3/4 cup chopped celery, can of cream of mushroom/chicken/celery (take your pick) soup, splash of lemon juice, 1 cup slivered almonds. Put in a casserole dish. Spinkle shredded cheddar cheese. Then top with crushed potatoe chips. Bake 350 for 30 minutes.

Thaw some chicken legs and throw them in a baking dish with some raw peeled potatoes that are cut in half. Cover with a can of Cream of Chicken soup and 1/2 cup of water. Bake at 375 for about an hour, until potatoes are tender and chicken is done.

Get some chicken breast, mix together some mayo and parm cheese spread on chicken top w/bread crumbs. Bake on 375 for about 35-40min until center is done and juice runs clear. I never measure so just eye ball it. Eveyone loves it, I got it off a mayo jar. good stuff.

chicken pot pie
2 cans of cream of potato soup
2 cups cooked chopped chicken ( I usually boil mine)
1/4 cup of milk
1/4 teas. thyme
1 can mixed veggies ( I like veg-all)
2 pie crusts
mix all and put into pie crust top with other and bake 40 min at 350 it's so easy and good!
I always give this to my friends if they are sick or had a baby...

Hamburger or Ground Turkey Burger Pie....

*Pat down the burger in a pie tin
*Season w/salt/pepper/garlic salt
*Bake @ 350 until burger is done
*Either cook & mash potatoes/or buy they mashed in the tub
*Add the potatoes on top of the burger
(my daughter adds sweet corn on top of the potatoes)
*Top the entire pie w/your favorite cheese...(Colby cheese works great)
*Add a salad & rolls....Enjoy!
