Chocolate Chip Cheesecake Supreme

1 cup finely crushed FAMOUS Chocolate Wafers
3 Tbsp. butter or margarine, melted
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3/4 cup sugar
1/4 cup flour
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 tsp. vanilla
3 eggs
1 cup miniature semi-sweet chocolate chips
PREHEAT oven to 325°F if using silver 9-inch springform pan (or to 300°F if using a dark nonstick 9-inch springform pan). Mix wafer crumbs and butter; press firmly onto bottom of pan. Bake 10 minutes.
BEAT cream cheese, sugar and flour in large bowl with electric mixer on medium speed until well blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Stir in chips; pour over crust.
BAKE 55 minutes or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight. Store leftover cheesecake in refrigerator.

New York Style Chocolate Cheesecake Recipe
1 1/2 cups chocolate wafer crumbs
1 cup plus 3 tablespoons sugar
3 tablespoons unsalted butter, melted
2 1/2 pounds cream cheese, softened at room temperature
1 1/2 teaspoons vanilla extract
1 vanilla bean, seeds scraped from inside of pod and reserved
3 tablespoons all-purpose flour
3 eggs
1 cup sour cream
8 ounces melted semisweet chocolate, cooled slightly
Fresh strawberries, for garnish
Whipped cream, for garnish
Fresh mint sprigs, for garnish
Preheat oven to 350 degrees F (if using a silver springform pan, or 325 degrees F if using a dark nonstick springform pan).
Lightly grease the bottom and sides of a 9-inch spring-form pan. In a mixing bowl, combine the chocolate wafer crumbs, 3 tablespoons of the sugar, and the butter and mix well. Press onto the bottom of springform pan and set aside.
In a large mixing bowl with an electric mixer, combine cream cheese, remaining cup of sugar, vanilla extract and vanilla bean seeds and beat until light and creamy. Add the flour to the cream cheese mixture and beat until smooth. Add the melted chocolate and sour cream and mix well. Add the eggs, 1 at a time, mixing on low speed after each addition until just blended. Pour the batter into prepared pan and bake for 1 hour to 1 hour and 10 minutes, until the center is almost set. Run a sharp knife around the rim of the pan and allow cake to cool on a wire rack before removing rim of pan. Refrigerate at least 4 hours or overnight before serving. Cheesecake may be made up to 2 days in advance before serving and will keep for up to 1 week in the refrigerator.
Serve the cheesecake garnished with fresh strawberries, whipped cream and mint sprigs

1 can (14 oz.) sweetened condensed milk (NOT evaporated milk)
1 egg
1 teaspoon vanilla extract
1 cup mini-milk chocolate chips (semi-sweet may be sustituted)
1 teaspoon flour
1 READY CRUST® Graham Pie Crust
Chocolate Glaze
1/2 cup mini milk chocolate chips
1/4 cup whipping cream
Preheat oven to 350°F. With mixer, beat cheese until fluffy; gradually beat in sweetened condensed milk until smooth. Add egg, vanilla; mix well. Toss chips with flour; stir into cheese mixture. Pour into pie crust.
Bake 35 minutes or until center springs back when lightly touched. Cool. Melt 1/2 cup mini-milk chocolate chips with 1/4 cup whipping cream; cook and stir until thickened and smooth. Immediately spread over pie. Serve chilled.
Helpful Hint: To prevent chocolate chips from floating to bottom of pie, sprinkle chips after baking cheesecake for 5 - 10 minutes.

Garnish chocolate chip cheesecake with shaved chocolate and whipped cream, if desired. Store chocolate chip cheesecake covered, in refrigerator.

Whip with an electric blender, pour into your springform pan and bake @ 350 degrees for 30 minutes (or until the edges are slightly puffy) and let it sit for about an hour after baking, then freeze or refrigerate. Always works perfectly for me !!
