Liquid honey keeps best in air-tight containers in a dry place at room temperature (70°F to 80°F). The air-tight cover is necessary because honey loses aroma and flavor and absorbs moisture and odors readily when exposed to air.
Keep creamed honey in the refrigerator as it may partially liquefy if stored at too high a temperature.
Cover and store honey in the refrigerator if it has been diluted with water or other liquid. Like other thin syrups, it may ferment or mold quickly if not kept cold.
Honey kept for many months may darken slowly and become stronger in flavor but will still be usable. However, when honey absorbs extra moisture, yeasts that are naturally present in honey begin to grow and ferment the sugars, producing gas and off-flavors. Honey that foams and smells like alcohol is spoiled and should be discarded.

To be safe it is a good idea. However honey is virtually immortal as far as shelf life. Samples of honey have been found in archaeology digs that were centuries old (perfectly sealed) and were still edible. If stuck in the woods wild honey is a good way to keep going. Hot cold or in a tomb, honey is good stuff.

No - Honey is a natural preservative and antibiotic, and can last up to 10 yrs without going bad. Putting it in the refridgerator will make it start to crystalise and it won't flow anymore. Room temperature and a dark place, like a kitchen cabinet, is the best place to store honey.

No, it's not necessary. But unless you are able to use it within a fairly short period of time, it will start to crystallize. But you can fix that by microwaving some in a micro-safe bowl on med. for 20-30sec. It will dissolve the crystals and you'll have the added benefit of nice warm honey for your tea, biscuits, etc.

No i wouldnt it wont go hard, but it wont come out of the bottle that easy and it will make it hard to spred. Kinda like if you put peanut butter in the refrigerator. But if you want to you can just get it out half an hour before you use it so it will be easy to spred.
