Peeling them under running water helps.
Extremely fresh eggs will not peel easily. In fact, an egg that is just a day or two old is almost impossible to peel. As eggs age, the shells will peel more easily. It is advisable that eggs used for hard cooking (including Easter Eggs) be at least 2 weeks old before cooking for easiest peeling. Hard cooked eggs that are cooked slowly over low heat (and not ‘boiled’) will be more difficult to peel.

I know it doesn't make much sense but putting salt in the boiling water does make a difference. Put the eggs in cold water then bring the water to a boil. Just as the water reaches a boil, turn off the fire. Cover the pan and leave alone for about 20 min. Immediately immerse the eggs in very cold water. The eggs will peel without any problem.

The best way is to use room temp eggs and boil in salted water with a touch of vinegar. Works every time, no need roll on counter which could crush an egg or running under cold water. Most people with running water would do this anyways just so they could touch the eggs after coming out of the water.

To cook the perfect hard boiled egg, start with cold water in a medium sized sauce pot. Add just a dash of salt, set to medium high heat. Bring water to a rolling boil, and turn the heat off. Let eggs sit in hot water for 13 minutes, use a kitchen timer. Then pour out the hot water, and run fresh cold water over the eggs, let sit in cold water until cool to the touch. Your eggs will peel easier, and you won't have that nasty looking green ring around the yolk. It is a good idea to cover the pot when you turn the heat off, it holds the heat in, and makes sure your eggs cook all the way through.

I can't believe no one said this yet!! You MUST!! put a good splash of plain white vinegar in the water before you start the cooking.
My method...
put the eggs in the pot
run cold water into the pot
a good splash of white vinegar in the pot
set a timer for 10 minutes
bring the eggs to a boil quickly
shut off heat when timer goes off
cover pot for ten minutes (I usually just reset the timer)
after the timer goes off, run cold water into pot to stop the cooking and chill the eggs
They will be perfectly cooked and moist (not green and overdone! or tough and almost cooked!!) every time. And peel beautifully...

Leave your eggs in the pot of hot water once cooked. Carry to the sink and run cold water over them.Once the eggs are cool to the touch, start cracking keeping them in the cool water, at this point the water can get under the skin of the eggs and make it easier to peel if you let them sit in the cool water for a couple of seconds. i know what u mean but this is how i peel them i run them under cold water and then i take a tablespoon and hit the egg all around it the egg shell will come off easier.

when you are done boiling them...take the pan, set it in the sink and run cold water over them until the water in the pan is really cold...let it set for a few minutes after that and when you take them out and peel them, the shell should come right off easily.

gently roll the hardboiled egg on the countertop to lightly crack the shell. the shell sticks to the membrane and peels off in bigger chunks.
