Enchilada Meatballs
2 cups crumbled corn bread
1 can (10 ounces) enchilada sauce, divided
1/2 teaspoon salt
1-1/2 pounds ground beef
1 can (8 ounces) tomato sauce
1/2 cup shredded Mexican cheese blend
In a large bowl, combine the corn bread, 1/2 cup enchilada sauce and salt. Crumble beef over mixture; mix well. Shape into 1-in. balls. Place in a greased 15-in. x 10-in. x 1-in. baking pan. Bake, uncovered, at 350° for 18-22 minutes or until meat is no longer pink.
Meanwhile, in a small saucepan, heat tomato sauce and remaining enchilada sauce. Drain meatballs; place in a serving dish. Top with sauce and sprinkle with cheese. Yield: about 4-1/2 dozen.

Salsa verde with blue corn chips and queso dip as an appitizer. To serve as side dishes, maybe some refried beans and a salad. I would say rice, but with the lasagna already having the carb department covered, go with a salad. It will no be as filling, but the main dish will.

Sounds delicious! I would just serve it with extra toppings - olives, sour cream, shredded cheese, guacamole, onions, tomatoes, etc. - and a big green salad. For dessert, if you want something Mexican, serve flan, or maybe just chocolate ice cream with those little Mexican cookies. Here's an easy recipe:
BISCOCHITOS (MEXICAN COOKIES)
1 1/2 c. Crisco shortening
1/2 c. white sugar
4 c. flour
1/2 tsp. salt
1 tsp. anise seeds
1 tsp. cinnamon
SUGAR COATING:
3/4 c. sugar
2 tsp. cinnamon
Cream sugar and shortening until light and fluffy. Add rest of ingredients and mix. Roll out dough on floured surface and cut out like sugar cookies. Bake on greased cookie sheets, at 400 degrees for 8 minutes. Dip in sugar coating mix while still warm.

Stick with the old standbys, spanish rice (or some variation) and either black beans or refreid beans. Or for lighter food, maybe try a salad with Jicama, red peppers and rommaine lettuce, look for a mexican style dressing maybe with cilantro or something with those flavors.

Spanish Rice easy to make.1 12 oz can of chopped tomatoes, 1 sm onion chopped , 1 green and 1 red chopped pepper(sweet) 1 19 oz can of tomato juice, fill 1/2 can with water . put all ingredients into a medium pot, bring to a boil, lower heat a simmer 10 min. remove from heat add 3 cups minute rice cover let stand 5 min. serve, that is it if you find you have to much rice just add a little more tomato juice................stir before serving .................good luck

Fruit and Vegetable Fiesta Salad
1 fresh, cored pineapple available in produce department of many markets, chopped
or 1 can cut pineapple in natural juice, reserve 1/4 cut of the juice of either product.
1 large green or red bell pepper, seeded and chopped
1/2 red onion, chopped
1/2 seedless cucumber, chopped
2 ribs celery, chopped
1 vine ripe tomato, chopped
1 lime, juiced
1 teaspoon chili powder
1/3 cup extra-virgin olive oil
Salt and pepper
Hot sauce (recommended: Tabasco), to your taste, optional
Combine chopped pineapple with chopped peppers, onions, cucumber, celery and tomatoes. In a bowl combine reserved pineapple juice with the lime juice and chili powder, whisk in extra-virgin olive oil and season dressing with salt and pepper, to taste. Add in a few dashes of hot saice if you like it spicy! Pour dressing over salad and toss.
